  • 1 tsp sunflower or vegetable oil
  • 2 skinless salmon fillet
  • 250g bag spinach

  • juice ½ lemon

Method

  1. Heat the oil in a pan, season the salmon on both sides, then fry for 4 mins each side until golden and the flesh flakes easily. Leave to rest on a plate while you cook the spinach.

  2. Tip the leaves into the hot pan, season well, then cover and leave to wilt for 1 min, stirring once or twice. Spoon the spinach onto plates, then top with the salmon. Gently heat the crème fraîche in the pan with a squeeze of the lemon juice, the capers and parsley, then season to taste. Be careful not to let it boil. Spoon the sauce over the fish, then serve with lemon wedges.

Definite 5 stars. The sauce is the key and will now be oft reperated as it will go with very easily with other types of fish. Increase the creme fraiche, capers and parsley, reduce the lemon and add lots of black pepper. I served with sweet potato chips and received an embarrassing amount of praise for something that was so quick and simple.I

This turned out perfect. I served it with the 'new potatoes Cooked on a bag with herbed butter' as suggested and steamed some asparagus spears for a lovely main course for Valentines night. Worked a treat!

What a lovely recipe. Made the sauce in 5 minutes this afternoon and wasn't sure about the flavours, but, once warmed through and served with the salmon and spinach it was great. We had ours with couscous (cheated and had an ainsley harriet one!!) and it worked really well.

It is as easy and as tasty as it looks. I couldn't believe that the dish I cooked looked just like the photo. My girlfriend and I had this as a quick mid-week meal and we were so surprised at it's flavours and simplicity. Definitely worth a keeper!

This receipe is perfect if you are on a diet. I am with slimming world and if you pan fry the salmon with fry light and use the half fat creme fresh it is perfect. I have never tried capers before, and I must admit they taste delicious with this receipe. My husband didnt think he would like capers, but he did. I am just printing off a copy of the receipe for my mother in law as she wants to cook it!

lovely - served it with a baked sweet potato. Think I either put too much lemon in the sauce though, or maybe heated it too quickly, as it started to almost go a bit lumpy as it cooled...still tasted nice though!

Yummy! so so quick and easy, although might try with a different kind of fish in future- salmon is expensive for a student! would also love to try the sauce in a jacket potato, perhaps with some tuna...
