  • 1 tsp sunflower or vegetable oil

  1. Heat the oil in a pan, season the salmon on both sides, then fry for 4 mins each side until golden and the flesh flakes easily. Leave to rest on a plate while you cook the spinach.

  2. Tip the leaves into the hot pan, season well, then cover and leave to wilt for 1 min, stirring once or twice. Spoon the spinach onto plates, then top with the salmon. Gently heat the crème fraîche in the pan with a squeeze of the lemon juice, the capers and parsley, then season to taste. Be careful not to let it boil. Spoon the sauce over the fish, then serve with lemon wedges.

Nice looking recipe - but how can it possibly have apparently precise nutrition data “321 kcalories, protein 32g” when the size/weight of the main ingredient, the salmon fillet, is not specified?

Very nice and will certainly cook it again. Wife loved it.
Made one mistake, I should have drained the spinach after I wilted it but even so it was a good meal.

My family loved it- though remember to really dry the spinach with a cloth. I did it a bit too delicately and we had a bit of water on our plates.

It's the simple sauce that makes this a winner. With three ingredients you have a really tasty sauce and an end results that looks so professional. You could serve this at a dinner party and wow your guests for very little effort. If you need a new way to serve salmon then look no further. Brilliant.

Delicious. I got some salmon half price in Sainsburys that was in a cook in bag over Christmas and froze it. Baked it in the oven. Only had frozen spinach so I pan fried that. Had no capers so I used a teaspoon of horseradish sauce instead with lemon juice and dill. It took 25 minutes from start to finish. Will definitely make this again and try it with different fish too.

Very simple and brightens up the salmon. The spinach softens the acidity of the lemon nicely. I served it with cajun sweet potato wedges.

Useful sauce. Easy way to make a piece of salmon a bit more interesting. Served it with rosti potato cakes.

Yummy and quick dish. I used hake fish instead and drained sliced olive instead of capers and turned out to be very good :)
