  1. Heat oven to 200C/fan 180C/gas 6. Tip the potatoes and shallots into a large, non-stick roasting tin, drizzle with the oil, sprinkle over the oregano, then mix everything together well. Bake for bake for 40-45 mins (or until starting to go brown), add the mushrooms, then cook for a further 10 mins until the potatoes are browned and tender.

  2. Make four gaps in the vegetables and crack an egg into each space. Return to the oven for 3-4 mins or until the eggs are cooked to your liking.

As others have said, either parboil or allow more time for the pots to cook and go brown, an extra 5-8 should do. But this is a great recipe, healthy but really tasty, and a really good way to cook eggs! We paired a lovely slice of home cooked ham: delicious.

Fab recipe very tasty although I did add some oak smoked bacon and tomatoes. So not so very healthy but very tasty.

Made this for my Husband and our little boy, both really liked it except they said eggs were too rubbery. Maybe I cooked them for too long? But will make again with some herbs as they said it lacked in flavour but as nice.

Really should have par-boiled those potatoes. Can't say I particularly enjoyed this one unfortunately - sure it could be made better with a few small changes though, some good ones in the comments.

Looks basic but so delicious. I steamed the potatoes beforehand and added some bacon. Actually nicer than the greaser alternatives, went down a treat and would definitely make again.

I've had this but fried. doing it oven baked is the best option because it is tastier and i loved the eggs! it took a little longer than i expected but my oven has a bust door so thats ok. i loved fried but adored oven baked. i'll definitely making this again soon!:-)

I agree with others when they say the potatoes need longer, but other than that this dish always turns out great for me. I've made it quite a few times now! It's great when you can't be bothered to cook because you can just bung it all in a tray and leave the oven to do the work.
