Hot-smoked salmon with creamy pasta & pine nuts

Add a few special ingredients to this simple pasta sauce and you have an impressive meal for friends in just 15 minutes

Method

  1. Cook the pasta in boiling salted water according to pack instructions. Meanwhile, bring the wine to the boil in a large frying pan, then simmer for 1 min. Reduce the heat, stir in the cream and season well.
  2. When the pasta is cooked, drain briefly and tip into the frying pan with the sauce. Add the Parmesan and flaked salmon pieces, and mix gently together. Pile into bowls, sprinkle with pine nuts and serve with the watercress salad (recipe below) alongside.

Watercress & cucumber salad

...with citrus poppy seed dressing. While the pasta is cooking, make the salad. For the dressing, whisk together 1 crushed garlic clove, ¼ tsp English mustard powder, 1 tbsp poppy seeds, 1 tbsp orange juice, zest and juice 1 lemon and 5 tbsp olive oil. Season well. Can be stored in the fridge for up to 1 week. Give the dressing a good shake and toss half with 200g watercress and some cubed cucumber. Serves 6.

    This is a rather heavy dish, which required a lot of seasoning to make it less bland. I loved the double cream&white wine sauce, almost didn't want to add salmon to it!

    This recipe is delicious. I felt a bit adventurous though so I left the recipe and fried chorizo in the wine, added mushrooms and prawns, blanched some curly kale and bought a bottle of Fleurie to match the salmon - SO GOOD!!!

    Used smoked salmon scraps and because of other comments that it was bland I added crushed chilli flakes, spring onions and loads of black pepper. Went down a storm and the guests "demanded" I do this dish again before they had even cleared their plates.

    Really liked this dish, although I did add a little passata to the sauce.It was yummy and i would make again....but probably not often due to cal content...maybe try it with creme fraiche the next time!

    Not discusting but not nice either, use a quality wine as i used a tesco branded wine, i think this may have had something to do with the rancid after taste

    This was absolutely beautiful. I made for 4 people, kept to the sauce measurements and used less salmon and added some raw king prawns once the creme fraiche (instead of cream) mixed into the wine. Once the prawns were pink I added the pasta - fusilli - with the salmon as per the recipe. The watercress & cucumber salad with the citrus poppy seed dressing went perfectly and we think this is a very good recipe for entertaining. 10/10.

    Very tasty and easy recipe. I used apple juice as a cheaper wine substitute, and creme fraiche as a cheaper healthier option. I also added some spinach as I thought this would go well. I was a bit unsure about the apple juice, but it went very well! It was also a success with my boyfriend. I will be making this again :)
