Italian meatloaf

This great-value supper is delicious served with jacket potatoes, green beans and gravy

Uncooked meatloaf can be frozen

Method

  1. Heat oven to 190C/170C fan/gas 5. Line the long sides and base of a 2lb loaf tin with double thickness baking parchment. Mix 2 tbsp each of the breadcrumbs and Parmesan in a small bowl and set aside. Tip all the remaining ingredients into a large bowl with a good shake of salt and pepper and mix well - hands are the best for this job.
  2. Press the mixture into the loaf tin and sprinkle with the reserved crumb mix. Bake for 40-45 mins until the top is golden and crunchy. If the top does not colour in the oven, pop the tin under the grill and brown the top for 5 mins. Cool in the tin for 5 mins, then lift out using the parchment and put on a board. Slice and serve with potatoes and green beans.

    Made this last night and it was delicious! Added some chopped parsley, dried oregano and some mild chilli powder and the whole family loved it. Will definitely be making it again!

    Wow! Very tasty, very easy to make. I added a tsp mustard and a couple of dashes of Worcestershire sauce. It did take longer than recipe stated to cook though & I cooked it in a water bath too to even the heat out a bit. Gorgeous!

    I currently have this cooking away in the oven.....but its taking ALOT longer than 40-45 minutes! I've followed all instructions to the letter....smells good though. Hopefully it will taste good too when its done and not pink anymore.

    Wonderful, cooked this evening. Just realised that I forgot to put the onion in. Still, tasted lovely though. Very quick to make especially with a 6 month old baby!

    5 Stars for Flavour & is so easy & quick to make/prepare - Minus a star for the recipe directions because it takes closer to 1.5hrs - 2hrs @ 180 degrees for it to cook through in the oven, as a result we had dinner far too late. Expected it to be ready for an 8pm dinner but it was well after 9pm when we sat down. I substituted smoked bacon bits instead of the pancetta, added an extra clove of garlic & sauted with the onion before adding to the mix. Tasted lovely & my boyfriend loved it (he turned his nose up when I originally told him what was for dinner!) he even wants to see if he can make it next time!

    This is a lovely recipe. So easy to make and very yummy! No complaints from my table when this was dished up! I'm sure you could also do many variations, ie not just pancetta and parmesan. Have to agree with some of the other comments in that it took longer than 45 minutes to bake- mine took about an hour.

    A big thumbs up from my brood and very quick and easy. Thoroughly enjoyed as a dinner and equally as much the next day as leftovers (made into a meatloaf sandwich by my rather uncouth husband!!!).

    This went down very well with my husband and 2 year old son (who kept saying "yum, cheese and bacon")! I used chedder and bacon, added basil and put the tomato paste on top (as forgot to add)...and it was indeed yum!

    WOW! I have just made this and took on everybodys advice - added oregano, doubled the tomato puree, used bacon (3 slices = 100g) and softened the onions....I ended up with a dish so tasty that my family were asking me to make sure I made this again! It did take longer to cook than stated - almost double the time and as someone said it was pink - but then we realised that it was the bacon that was pink but it was defo cooked! Next time would serve with a salad. Thanks again for a wonderful recipe!

    Added finely chopped jalapeños, diced bell peppers and mushrooms, and this meatloaf was incredible. Made it with the suggested roast potato recipe, which were a huge hit. I also steamed some green beans, then I pan fryed them with parmesan and red chilli flakes. I left out the breadcrumbs for my gluten free wife, and it was still brilliant.

    Thoroughly enjoyed by all. So much so that there were no leftovers. I too softened the onions, doubled the tomato puree and added oregano. Next time I will add some mushrooms. Took about an hour to cook and I will definitely be making it again.
