  1. Using kitchen scissors, snip the sausages into meatball-size pieces. Heat a large pan and fry the pieces in the oil for about 5 mins until golden all over.

  2. Add the oregano and garlic, fry for 1 min more, then tip in the tomatoes, stock, olives and mushrooms.

  3. Simmer for 15 mins until the sausages are cooked through and the sauce has reduced a little. Serve with mashed potato or pasta.

This is so easy and smells great while it's cooking. My husband was practically salivating and I'll definitely make it again.

My partner loves sausages so I always cook recipes with sausages in and guess what he loved it and so did I. I used green olives instead of black and think I would definitely use black next time. I served it with carrots, green beans and new potatoes, which, as Mark said, are great for soaking up the juices. Another fab midweek recipe.

Very quick and simple to prepair, cooked the sausages in a small pan prior to cooking in the larger pan to remove excess fats, much healthier, used Tesco Finest Cherry toms, currently only 49p (Half Price, 15th Feb) lovely texture and flavour. Was tempted to thicken sauce slightly, don't, great with potatoes which soaks us juices. Lovely to have found a recipes that use oregano as I bought loads back from Protugal, will make again, maybe pasta next time, yum

I'm on a diet, which doesn't delight the hubbie, but here's a recipe that pleased us both!

A winner! Absolutely lovely. Didn't need all the mushrooms though and I did add a small splash of red wine!
