Bread sauce

The ultimate finishing touch to any Christmas feast and surprisingly easy to make, too

Ready in 15 minutes, plus infusing time

Method

  1. Put the first 4 ingredients in a pan and bring to the boil, then turn off the heat and leave to infuse for 30 minutes.
  2. Strain the milk into a clean pan, add the breadcrumbs and bring to a simmer, stirring until the sauce is thickened. Stir in the butter and cream and season really well.

    Any idea whether you can make this and freeze it ahead of time? I'm guessing that maybe the milk would split in the freezing ....

    I'm always tempted to either eat the onion or shred it into the sauce. Usually I come up with a compromise - half and half!

    My grandma every year made bread sauce and there was always a fight between my dad and the rest of the family as to who would get it. Dad usually won. I have never made bread sauce before and was unable to ask my grandma for the recipe but this was perfect - absolutely delicious. All I would say is make sure you leave the milk to absorb the flavours for as long as possible otherwise it can taste a little bland.

  • 1 bay leaf
  • 6 peppercorn
  • 568ml milk
  • 200g fresh breadcrumbs
