- 1kg new potato (try a pink variety such as Pink Fir or Anya)
- 2 red onions, finely chopped
- 2 garlic cloves, crushed
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp cider vinegar
- ½ tsp sugar

Method
- Boil potatoes in salted water for 10-15 mins until tender. While the potatoes are cooking, mix together the remaining ingredients to make the dressing. Drain the potatoes and while still hot, mix together with the dressing.
- Tip into a secure container to take with you.

Made this for a picnic today. Only modified slightly - used barely any oil at all and warmed all the dressing ingredients in a pan before pouring over potatoes. I also used one large red onion instead of small and red wine vinegar instead of cider.
Went down a treat with everyone, I will make it again!
This was so easy, and very very tasty- just as nice cold the next day! Went down a treat with dinner guests! I heated the dressing in microwave first so sugar started to dissolve then poured over onions and left on a low temp for about 30 mins before serving- otherwise sugar didn't really do anything!
