Method

  1. Crush the biscuits by putting them in a large, strong, plastic food bag and bashing with a rolling pin. Melt the butter with the syrup or honey in the microwave, then stir in the biscuits. Press onto the base and up the sides of a 12 x 36cm rectangular tin (or 23-25cm round flan tin) and chill while you make the filling.
  2. Break up the two chocolate bars and put in a large bowl. Melt in the microwave for 2-3 mins on Medium, stirring halfway through. Stir in the vanilla extract, then sift in the icing sugar. Whip the cream until it just holds its shape, then fold into the melted chocolate. Pour into the prepared tin and smooth the top. Chill for at least 2 hrs or for up to 2 days.
  3. Just before serving, remove the tart from the tin and slide it onto a flat plate (loosen edges first with the tip of a small pointed knife). You will find it easier to remove the tart if you leave it at room temperature for 30 mins. Put a few tsps of crème fraîche along the centre of the tart (or around the edges if the tart is circular) and top each with a raspberry, then dust lightly with icing sugar. Cut into thin slices and serve with extra raspberries on the side.

Great recipe, went down a storm but if you put the vanilla essence in with the chocolate mix, it will harden. We just put the final mixture into the food processor and it solved the problem.

Doubled up this recipe for a sunday lunch party of 14. There was more than ample. Highly emphasise that less is more in this instance....don't make your portions too large!!!!

Really tasty although I agree with Julie - 100g of butter is far too much for the base. Thanks for the tip - i will reduce by half next time :)

Easy to make and really delicious. The chocolate did go all hard and grainy as mentioned by the other reviewers, however folded in the chocolate and it mixed in absolutely fine. Trust the recipe - it really does work!

I made this for my babies Christening and everyone absolutley loved it. It is v easy to make and is soooooooooooo delicious. It was dangerous to make at home because there are only two of us & baby and the temptation was too great.

Sadly i was not successful with this recipe. I melted the chocolate the old fashioned way and added the vanilla essence to the whipping cream but for some reason, the filling just didn;t set despite being in the fridge for 5 hours. It was a big disappointment and I won;t be trying this again. I don;t think puddings are my forte.

I have made this twice now, both unsuccessful ! the first time I had a problem mixing the chocolate into the cream and there were hard little bits of chocolate in the final tart. I made it again today and used the electric mixer to avoid the same problem, but after 5 hours in the fridge the tart had not set - I give up !

Made it twice this weekend - first time was abit of a disaster as the vanilla made the chocolate harden, so the second time I added the vanilla and icing sugar to the cream and it came out perfect. Everyone loved it.

I made this for a family gathering and it went down really well, although a little strong for the children. I might make it with all milk chocolate next time

Superb, a little sweet with all the icing sugar - will half the amount next time. I added a little brandy to the cream whilst whipping. Scrummy and so easy. Does anyone know where I can get a 12cmx36cm tin though?
