The thing about making iced tea is to avoid the bitterness that comes out of the teabags - however good they are. To avoid this, let the tea infuse in sunlight - for up to 4-5 hours if necessary. You get a really good tea taste in a liquid that is very pale and not at all bitter. When you have made up the iced tea, add a dash of bourbon!

I've been looking for an iced tea recipe for awhile and thought I'd try this one out. It was nice enough and I made it the way GF PJT suggested with leaving it out in the sun to steep for a few hours. I made it with Twinings Ceylon teabags and I ended up mixing it half and half with some Sprite and that made a really nice summery "swinging in the garden hammock" iced tea/punch type drink. If I make it again this is the way I'll do it. However, this was not the iced tea recipe I was looking for so I shall continue to search.

Try using Earl Grey or Lady Grey teabags, no bitterness and the Bergamot flavour in the Lady Grey teabags is wonderful. I prefer to squeeze the juice from oranges, lemons, and then add the rind to the teabags and castor sugar pour boiling water over this, once it's cooled down, strain into a jug and add the juice, now THAT'S refreshing.

I made this just for a family dinner and it went down really well even with my father who wasn't an Ice Tea sort of man. But I must stress that this is much more Orange Juice than Iced tea, it is very refreshing and lovely but as I said much more a mocktail. It was easy to make but remember to think about cooling time as it is not stated here. It takes about 10 mins if you cool it in the fridge. Other than that it is a perfectly lovely recipe.
