Tomato, spinach & mascarpone gnocchi

Just five ingredients are needed to magic up this simple Italian supper. Crack open the Chianti and enjoy

Method

  1. Cook the gnocchi according to packet instructions and drain. Meanwhile, heat the tomato sauce in an ovenproof dish and add the spinach, stirring until wilted.
  2. Add the gnocchi, season and spoon blobs of mascarpone over. Scatter with shavings of parmesan or Grana Padano and grill until bubbling and golden.

Cook some mushrooms and onions in a little oil before adding the tomato sauce and try other cheeses such as mozzarella or ricotta.

    i think this is a reasonably nice recipe - if you needed to rustle something up fast. i used passata and my own herbs etc instead of the shop-bought pasta sauce. i think i made it all a bit too tomatoey, though ....! not keen on using mascarpone cheese .... in the future, i would probably stick to mozarella and parmesan.

    Nice one! I used fresh tomatoes cooked in a pan with garlic on olive oil, added the spinach and then the gnocchi. Instead of mascarpone or mozzarella, I used gorgonzola and of course parmesan. Very tasty!

    Really lovely, used a simple home made tomato sauce (onion, garlic, tinned tomato, tomato purée, basil and oregano) and it worked really well. About to cook it for the second time, on the recommendations I might try some slightly different cheeses, although I really liked the creaminess of the mascarpone.
