Method

  1. Heat the oven to 180C/fan 160C/gas 4. Put the dates and tea in a saucepan and bring to the boil. Cook for 3-4 minutes to soften the dates. Stir in the bicarbonate of soda.
  2. Beat the butter and caster sugar together with electric beaters until pale and creamy, then beat in the egg, flour and mixed spice. Fold in the date mixture and pour into a buttered ovenproof dish or brownie tin. Bake for 30-35 minutes or until the top is just firm to touch.
  3. Meanwhile, make the sauce by putting the sugar, butter and cream in a pan over a low heat and simmer until the sugar has dissolved. Cook until the sauce is a lovely toffee colour. Cut the pudding into squares and serve with the warm sauce and a scoop of vanilla ice cream.

    I have only ever had cheap sticky toffee pudding prior to making this. Never really liked them as I always found them overly sickly. Was persuaded by my boyfriend to make one. Tried this recipe and it is amazing!! Lovely toffee flavor and not horribly sickly at all. My boyfriend commented that it was like proper ones you get in a posh restaurant.

    Very delicious recipe! I'm making it today for the 2nd time. Very easy and foolproof to make. The toffee sauce is very easy to make and can be cooked in advance and reheated when needed. As stated in several of the comments, I also make double the quantity of sauce. If there's any left over (highly unlikely) you could store it in the fridge and use it as a delicious sauce for icecream.

    My husband requested sticky toffee pudding as his birthday cake so I made this one, complete with a candle on top! First time I'd made this at home and a great recipe - easy to follow and turned out well. We both loved it!

    My daughter and step daughter made this for dessert on Easter Sunday without any help from me. They didn't like the sound of the dates but when it was made you couldn't taste them, they just add to the toffee flavour. Very well done and went down a treat. I'm sure we'll be making it again.

    Very quick and easy recipe. I use soft dark brown sugar in the cake mix instead of golden caster to give a deeper, richer flavour. We like a lot of toffee sauce with ours so we need to increase the quantities of the sauce ingredients by 50%. This has become my go-to sticky toffee pud recipe, everyone loves it!

    I LOVE this recipe!! It turned out great first time, and everyone was so impressed (including me)! The pudding was substantial but not heavy at all, and the sauce was a lovely creamy caramel. I made double the amount suggested and it all went. A real winner!

    This was a great recipe and me and my daughter enjoyed making this. The only thing we changed was using margarine in the sponge instead of butter. Whole family enjoyed, especially grandma!

    Absolutely delicious!!!! Made it for 12 last night and it went down a treat. Can't afford Medjool dates as a student, but normal dates worked just fine!

  • 200g dried dates , stoned and chopped. Buy Medjool if you can
  • 250ml black tea (not too strong)
  • ½ tsp bicarbonate of soda
  • 85g unsalted butter , softened
  • 175g self-raising flour
  • 1 tsp mixed spice
  • 175g golden caster sugar
  • 2 eggs , beaten

FOR THE TOFFEE SAUCE

  • 100g light muscovado sugar
  • 100g unsalted butter
  • 142ml carton double cream
