Sticky toffee pudding

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Put the dates and tea in a saucepan and bring to the boil. Cook for 3-4 minutes to soften the dates. Stir in the bicarbonate of soda.
  2. Beat the butter and caster sugar together with electric beaters until pale and creamy, then beat in the egg, flour and mixed spice. Fold in the date mixture and pour into a buttered ovenproof dish or brownie tin. Bake for 30-35 minutes or until the top is just firm to touch.
  3. Meanwhile, make the sauce by putting the sugar, butter and cream in a pan over a low heat and simmer until the sugar has dissolved. Cook until the sauce is a lovely toffee colour. Cut the pudding into squares and serve with the warm sauce and a scoop of vanilla ice cream.

    I made two of these for dessert on Christmas day as we had 8 adults and 8 kids and no-one is very keen on christmas pudding. I made the puddings and the sauce the day before (double sauce like others recommend) and it was a big hit.

    I made this for first time to take to dinner party - as it was going to be shared round I made extra of the sauce and with hot custard it was the hit of the evening - lots of requests for the recipe!!

    Very tasty but would consider reducing the mixed spice as it overpowers the taste a little. I also skewered some holes and poured over some toffee sauce! Yum!

    Very easy and quick to make, lovely soft, spongy, moist cake. Toffee sauce is lovely too but not necessary, custard, cream, ice cream or on its own would be fine. This cake was a hit with both my other half and son which is always a bonus. Will definitely make this one again and check on it after 25 mins instead of 30.

    This was lovely! Really quick and simple to make with a great toffee taste. The sauce wasn't as sticky as i'd of liked it but had a good taste. Had a much better texture when cooled slightly. This easily serves 8 and will definitely be making it again!

    Can anyone tell me the best size overproof dish to use if I don't use a loaf tin - am dying to make this recipe but worried about the dish being too big or too shallow to cook it properly in the suggested time.

    i made this for a dinner party, i wasnt sure how it would turn out as it wasnt a steamed pud. but was very pleased with the results. Its as good as any that a decent pub would serve up!

    Made this yesterday to take to a dinner party and it was great! So easy and tasted amazing, served with clotted cream! I would have liked more dates in the cake though so will try increasing the quantity next time and hope its ok!

    I have only ever had cheap sticky toffee pudding prior to making this. Never really liked them as I always found them overly sickly. Was persuaded by my boyfriend to make one. Tried this recipe and it is amazing!! Lovely toffee flavor and not horribly sickly at all. My boyfriend commented that it was like proper ones you get in a posh restaurant.

  • 200g dried dates , stoned and chopped. Buy Medjool if you can
  • 250ml black tea (not too strong)
  • ½ tsp bicarbonate of soda
  • 85g unsalted butter , softened
  • 175g self-raising flour
  • 1 tsp mixed spice
  • 175g golden caster sugar
  • 2 eggs , beaten

FOR THE TOFFEE SAUCE

  • 100g light muscovado sugar
  • 100g unsalted butter
  • 142ml carton double cream
