Very quick chicken curry

A super quick and tasty curry for those who love Indian spices but don't have time to spend hours in the kitchen

Method

  1. Heat a little oil in a deep non-stick frying pan (with a lid) and add the onion. Fry for about 3 minutes until tender then stir in the curry paste and fry for a minute. Add the chicken and tomatoes and a splash of water, cover and cook for 15-20 minutes until cooked through. Stir in the spinach until it just wilts then stir in the yoghurt and coriander. Season. Serve with rice, naan bread or a salad.

    It is what it says, A very quick chicken curry, no messing about with too many ingredients and it tastes good. I'm not a fan of coriander though, so I omitted that.

    I've made this loads of times - it's foolproof and just great for midweek. I do add fresh chillies with the onion, and use more paste, but my lot do love hot food!

    Made this for my boyfriend, was so very easy to do. I added a fresh chilli for extra kick. Great mid-week meal, and great for having for lunch the next day.

    This is so yummy and fabulously quick. It tastes quite authentic, definitely a satisfying dish. My partner said he would be happy to eat variants of this healthy recipe instead of takeaway curry, so that is a result! I made the mistake of using Jalfrezi instead of Madras paste which made it too mild for our palettes but is was still utterly delicious. I used Total greek yogurt which I felt worked well. I will definitely be making this again and trying it with different meat like lamb neck and adding extra veggies like red peppers and swapping yogurt for coconut milk. Can't wait!

    Excellent! Would recommend you don't add the water unless it's needed, depending on size of tomatoes used. Spinach is a nice touch but I think you could chuck just about anything in this.

    Brilliant recipe! Very quick - true to it's name. Changed it slightly by adding 1 red pepper and 1 green pepper. I used tinned tomatoes too, a little water and at the end of the cooking time I put it a sprinkle of garam masala and a spoonful of mango chutney. I didn't add spinach or yogurt. Served it with microwave Tilda rice for speed. Everyone thought it was yummy!

    Very enjoyable Friday night supper dish. My husband who is not keen on spicy or hot food said it was delicous. Made sure the onions were well cooked and didn't have yoghourt. Ideal to cook during children's bathtime amd then enjoy.

    Very Flavoursome, very easy, lovely meal enjoyed by me, my wife and 15 month old daughter (she couldn't get enough). It's not my favourite meal in the world so it's not getting 5 stars but you'll be hard pressed to find a better curry recipe that's so quick to cook. :-)

    I had to make this last minute so improvised with coconut milk instead of yoghurt. Made it for 4 but used half a tin of the coconut milk. Cannot believe something so easy was so delicious. Has joined my list of "banker" recipes
