Ingredients

  • 100g cocoa
  • 250g butter
  • 500g golden caster sugar
  • 4 eggs, beaten
  • 100g self-raising flour
  • 100g desiccated coconut
  • icing sugar, to dust (optional)

Method

  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn’t catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.
  2. Tip into the tin and bake for 45 mins on a middle shelf – check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

Sensational brownies enjoyed with coffee during a "Christmas Symposium". Lots of favourable comments "exactly what real brownies should be like"!!

A little trick you might want to try... I cooked these for 45 minutes, turned the oven off and left the tin in overnight. Next morning I had no problem cutting them into 16 pieces and they were definitely gooey and oh so delicious! Such a doodle to make.

Easy and very very tasty. I used goats butter and they worked just as well. I'd give them another 5 mins in the oven next time because the middle was a little undercooked for my liking. Will definitely make these again.

I replace the coconut to vanilla suger. And try it with a tip of Marmite ( yes, really!! give it a chanche ) and rose peppercorns....

My new favourite brownie recipe! Really simple to make and sumptuously delicious! Only downside is they're far too easy to eat and not that easy to share!

Brilliant! I get so many compliments for these.
I also just use the liquid butter stuff so just mix and bake- so easy and yummy :)

Utterly amazing. I initially chose the recipe as it was cocoa powder rather than melted chocolate which would save me money. It didn't fail to impress on any level. THE BEST BROWNIES EVER!!

Made this yesterday and absolutely delicious, crispy/chewy on the outside and chocolatey/squishy on the inside........YUMMY! I used about 50g less of sugar and added in a few dried cranberries and a handful of broken up pecans. Dusted with icing sugar.

Just followed this recipe using 'vegetable shortening' instead of butter as a friend is lacto intolerant and it tastes delish! Only needed 30 minutes - best brownie I have ever tasted - thanks

This recipe was a nice change from a standard brownie recipe; the coconut flavour is delicious with the chocolate but unfortunately adds a slight grainy texture...didn't stop me eating five though! Really tasty, could perhaps benefit from some dark chocolate chunks.

These are delicious, I made them on Friday night for a party on Saturday and they all went! So moist but with a little crunch and the coconut is yummy! Seems to be a winner!

I baked for the first time in my life and i tried this recipe, i really can't explain the taste of it, its neither too sweet nor cocoa-ish. I feel that its perfect and it will go extremely well with some lovely vanilla ice cream although i used real coconut and i love it :D i have to try this again, next time ill make my mom make it :)

Absolutely the best brownie recipe ever. Lovely and moist, very chocolatey without being overwhelmingly sweet and the coconut adds an extra dimension. I often get asked when I'm making some more.

I usually leave it in for an extra 10 mins as I find it a little squidgy. Heavenly..

Really easy to make with really great results. These were so tasty served warm with vanilla ice cream and the coconut was a great addition. I followed the tip of covering the brownies with baking parchment from 30mins onwards and this lead to a great even bake with a soft crust. Will be making these again!!!

Possibly the best brownies ever! Love the dessicated coconut texture. Amazing! Have made these several times over and taste fantastic with cream/ice cream when warm for a dessert.
