Anzac biscuits

These iconic biscuits were originally made to send to the ANZACs (Australian and New Zealand Army Corps) serving in Gallipoli

Method

  1. Heat oven to 180C/fan 160C/gas 4. Put the oats, coconut, flour and sugar in a bowl. Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir into the golden syrup and butter mixture.
  2. Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.
  3. Put dessertspoonfuls of the mixture on to buttered baking sheets, about 2.5cm/1in apart to allow room for spreading. Bake in batches for 8-10 mins until golden. Transfer to a wire rack to cool.

    The soda was really, really too much for this recipe. Left the whole batch tasting unpleasant. Otherwise it seemed like a good recipe. Pity about the ingredients.

    I wanted a recipe that used up leftover coconut and oats - so these biscuits were perfect. I added some ground cinnamon, ginger and all spice as I love the spicy warmth these add to bakes. Totally delicious - I have already eaten two and the second batch isn't even done yet!

    Absolutely wondeful! Great for beginners and uses very little ingrediants. Definitely recommended! Had to increase the temp and time for them to turn golden, but they turned out scrummy!

    Brings me back to being in Oz. I doubled the golden syrup, even though they ended up larger and flater, it means they are nice a chewy!

    I used Jumbo oats and added chopped apricots but found the mixture to be too friable initially. i added some water to the mixture which allowed me to form the mixture into balls. this worked out better. they taste good.

    By the way - any suggestions as an alternative to Golden Syrup. I live in the US and while I can buy golden syrup, i have to go out of my way to find it. I realized that i omitted the tbsps of water and added less sugar, which would obviously make a difference to the mixture, and had a i read all the comments and ratings before I made them, I would've noticed this beforehand and avoided my initial frustration with the dryness of the mixture. This is why I love this website because I learn from the errors of others - except, Ha, ha, not if I don't read them!!!

    My sons are coeliacs and I tried the recipe using Dove plain flour. The results were good but the biscuits were slightly more brittle than usual. Very very good.

    We make these several times a week, that is myself and my 9yr old daughter and 6yr old son. We are slightly naughty as we brush ours with melted chocolate when cooked and then let them set. Delicious!

    I've made these countless times and always double or triple the quantity BUT never double or triple the soda. It leaves an aftertaste and even if I just make one batch, I cut down on the soda from 1 teaspoon to about half a teaspoon. A little less syrup makes them less chewy. If you prefer the crispy and flatter, just flatten them with a spatula half-way through cooking. Finally, they are GORGEOUS-ER :) if drizzled with chocolate [milk or dark] after cooling a little! @//*_*\\@

    Very easy and an interesting recipe, but my buscuits were so crumbly and i was so disappointed with the results. the taste was nice, although very very sweet (i would reduce sugar next time). Tasted just like flapjacks - which makes me think my time would have been better spent making flapjacks rather than these. Shame :(

    Quite brown but still very soft when came out of the oven. Everyone said they were yummy and chewy. I added cherries and raisins to a few of them too.
