  1. Video tutorial: Melting chocolate

Method

  1. Crumble the digestives in a food processor, add the melted butter and mix well. Place in a 20cm flan ring with a push-up base and pat down with the back of a spoon. Melt the chocolate in a microwave or a glass bowl set over a pan of simmering water. Mix the cream cheese, cream and sugar together until smooth. Add the raspberries and stir in, then add the melted chocolate and quickly swirl through. Spoon into the flan ring and smooth the top with a palette knife, then place in the fridge and chill for 2 hours. Serve dusted with icing sugar and a little melted chocolate if you like.

Making it your own

Who doesn't love cheesecake? Use good-quality chocolate like Green & Black's, after all it is for you, too. Leave the raspberries out if you want to make this at other times of the year.

We were surprised by how well this turned out. Lovely and creamy, not overpowering. It was quite easy to do. We will probably make this again.

I must admit, I was very disappointed with this. I love cheesecake and have made other recipes from this site to great effect. But this just lacked something, myself and others found it a bit 'blah'.

Simple and quick to make, so marks for that. But, this was way too sickly despite using v good chocolate. It might be better with plain chocolate for that reason.

This was a really easy recipie to follow, it only took about 15 mins from start to finish! It was nice, but it was missing something and i cant put my finger on it!! Think i may have "swirled" the choclate through too much, as my topping ended up looking a pinky-brown colour!!! I will be making it again though!!

I've made this twice now, both times without the raspberries, and both times a huge hit with friends and family. It's so lovely and creamy and rich. A definite keeper.

This was so easy to make and everyone loved it. Does look a bit messy. Second time I made it I left the chocolate out of the mix and sprinkled some on top after it had cooled.
