  • 4 salmon fillet about 140g/5oz each


  1. Boil the potatoes in a large pan for 4 mins. Tip in the peas and beans, bring back up to a boil, then carry on cooking for another 3 mins until the potatoes and beans are tender. Whizz the olive oil, lemon zest and juice and mint in a blender to make a dressing(or finely chop the mint and whisk into the oil and lemon).

  2. Put the salmon in a microwave-proof dish, season, then pour the dressing over. Cover with cling film, pierce, then microwave on High for 4-5 mins until cooked through. Drain the veg, then mix with the hot dressing and cooking juices from the fish. Serve the fish on top of the vegetables.

Really just used the microwave instructions with the dressing. Couldn't be simpler or quicker. Served with cauliflower and broccoli so v v healthy!

Brilliant quick, healthy and simple recipe enjoyed by whole family. I used half a lemon and added broccoli and served with corn on the cob too. Good for weaning babies too.

This is really yummy. I couldn't believe so few ingredients could make something so delicious! I baked the salmon in a foil parcel for 10 mins and added tenderstem broccoli to the veg. It was the nicest and freshest salmon meal I've had in ages. I will definitely make it again.

definatley reserve some of the mint sauce for after cooking, as the microwave somewhat destroys it.....otherwise a scrummy healthy dish :)

Super easy to make plus super tasty. It is always a favorite of my guests. I have tried using both the microwave and the oven. Both work nicely although i prefer using the oven (about 20 mins). It also works well with soy sauce.

A lovely , simple dish - I was also sceptical about microwave but it worked well and my husband thought peas were fresh not frozen - so all round a good result

Excellent. Just be careful not to overcook the salmon in the microwave. The sauce would also be tasty with other strong fish, or even chicken for a change.

We really liked it. I hate the microwave and I was dubious. It did begin to explode before it was cooked but I turned the power down and it was fine.

I marinated the salmon with the sauce, microwaved it and served it with stir fried vegetables and new potatoes. It was delicious.
