  • 1l hot vegetable stock
  • 400g tin chopped tomatoes
  • 100g thin spaghetti, broken into short lengths
  • 350g frozen mixed vegetables
  • 4 tbsp pesto
  • drizzle of olive oil
  • coarsely grated vegetarian parmesan-style cheese, to serve

Method

  1. Bring the stock to the boil with the tomatoes, then add the spaghetti and cook for 6 mins or until done. A few minutes before the pasta is ready, add the vegetables and bring back to the boil. Simmer for 2 mins until everything is cooked.
  2. Serve in bowls drizzled with pesto and oil, sprinkled with parmesan.

Very easy to make and very tasty and filling. I also used small pasta shapes instead of spaghetti which worked well, I added some garlic and a small chilli too. The pesto added a lovely flavour. Served with crusty bread with melted cheese which worked well with the soup's flavours. Will definitely make this again.

I've literally just made this for lunch and I was a bit worried it was going to be a bit bland but it SO wasn't! It was delicious and much better than any shop bought soup. So good, I want some more!

Fantastic recipe, so quick and easy. I always add a tin of haricot beans at the end with the veg, makes three portions for lunch without needing bread. I don't bother with the olive oil at the end, and the parmesan isn't necessary, but the pesto MAKES it! Brilliant recipe!

Extremely easy.
Came home from work with a sore throat and threw this together in minutes. Great recipe cos it uses things you'll definitely have in the house. I added a handful of red lentils in the beginning with the tomatoes and they cooked perfectly. A+

HUGELY impressed with this simple, delicious one pot recipe. I followed it almost exactly (unheard of for me!), but the only thing I added was a good dose of black pepper at the end and a tin of haricot beans to make it into a meal. REALLY, REALLY, impressed.

Really good! I wasn't expecially keen the night i made it, but since it was for lunch the next day I left it in the fridge overnight. Much better! A little bit watery, but easily fixed with a few extra minutes simmering time. Thanks!

Really easy and tastes wonderful, made it for 5 people and they all loved it, served with garlic bread which went down well. added some herbs and a few garlic flakes to season.

Came home from travelling, no food in the fridge and didn't feel like cooking. Didn't feel like shopping either! This was perfect and very tasty :)

Very good, I used fresh veg as i didn't have any frozen,but added a teaspoon of sugar and a splash of balsamic to give it a bit more body and flavour, lovely served with toasted cheese.

Lovely but slightly watery. To make it more filling the second time, I swapped half of the vegetable stock for seasoned tomato juice. Absolutely perfect!
