  • 1l hot vegetable stock
  • 400g tin chopped tomatoes
  • 100g thin spaghetti, broken into short lengths
  • 350g frozen mixed vegetables
  • 4 tbsp pesto
  • drizzle of olive oil
  • coarsely grated vegetarian parmesan-style cheese, to serve

Method

  1. Bring the stock to the boil with the tomatoes, then add the spaghetti and cook for 6 mins or until done. A few minutes before the pasta is ready, add the vegetables and bring back to the boil. Simmer for 2 mins until everything is cooked.
  2. Serve in bowls drizzled with pesto and oil, sprinkled with parmesan.

Very tasty and warming on a cold miserable day (like today) Added a little garlic and a good squeeze of sundried tomato puree.

very tasty soup, i added some garlic and chorizo, did not have canned tomatoes so i used tomato juice instead.
Will defenitely make it again!

This was super quick and easy to make, tasted fab. I added a sprinkle of chilli flakes and mixed herbs. Delish!

I used a tin of cherry tomatoes, garlic and onion and leftover fresh veg (1 yellow pepper, 3 carrots and a good handfull of curley Kale) topped with pamesan and chilli flakes.....was delicious! Kids loved it too!

A quick and filling recipe if you are pushed for time after coming home from work.

I absolutely love this recipe and it's now a regular appearance in our weekly meals.

Super healthy and filling dish, what more could you want! :)

yummy and quick. even the husband liked it. add some chunks of cauliflower to give a little more bulk. will make again.

Great quick and tasty recipe for after school dinner. I did not have enough mixed veg, so I added tinned cannellini beans and chopped up some left over ham. Very tasty and super quick! The whole family enjoyed it!

This was delicious & so simple, i added half an onion and a clove of crushed garlic along with finely chopped carrots & chopped string beans, i will be bringing this to work for lunch in the future

I really liked this recipe. It was so easy. I didnt have any pesto or frozen veg, instead I added peppers onions, garlic and frozen peas. Handful of pasta to keep the calories down. Very good recipe, only negative is it is slightly watery. Next time, i will reduce the amount of stock.

I used the remainder of a carton of V8 vegetable juice and made up the volume with stock, had several packs of different frozen vegetables which needed to be used up so they went in too plus half an onion from yesterday along with some garlic and black pepper - it was delicious but I will never be able to replicate it as I may never have the same left-over ingredients again!

I have this soup twice in the last week and me and my partner and 2 children love it!!!! I have found that if i boil the veg seperatley the stock doesn't reduce as much..... really tasty and filling though. Is now a favourite of mine, and a great way to get a 3 and 1 yr old to eat veg!!!!
