  1. Heat the oil in a pan, add the onion and cook for 10-15 mins until soft. Add the garlic for the final min, then stir in the beans to heat through. Add the lemon zest and juice. Stir in the parsley to serve.

I tripled the recipe to serve 15 people as part of a buffet. None left but definitely needs a good amount of seasoning

I made this to serve alongside some salmon and the lemony flavours worked really well. I was a bit concerned that my husband wouldn't be keen as he's not a fan of parsley but it went down very well.

I've made this several times.
It is so quick and easy. Makes a delicious side dish.
Is best with a good amount of parsley, and I add a little extra lemon to taste and of course - seasoning is a must!!

Hardcore carnivores found it lacking in salt and (-imagine a very, very unenthusiastic tone of voice-) "very healthy".

Super easy and very, VERY good!
Made this today for lunch as a side dish for the chicken kiev. Couldn't be happier! I'm not sure I used the same beans, as the beans I bought, as a result of translating "butter beans" to portuguese, are brown and not white...
Anyway, adored it, I definitly recomend you try it with the chicken kiev and I will definitly be making that combo again!
