Method

  1. Pour the espresso or strong coffee and milk into a blender. Add 2 scoops of ice cream and the ice cubes, then blitz until it is the consistency of a smoothie. Pour straight into a tall glass, top with the last scoop of ice cream and crumble over the brownie or cookie to finish.

New flavours or low-fat

For a lower-fat iced coffee sundae, use semi-skimmed or skimmed milk. Experiment with flavours; for a mocha iced-coffee sundae, use 2-3 scoops of chocolate ice cream.

Taste team comment

'I tried this with both cookies and brownies - both worked well. I was surprised at how refreshing it was. The easy preparation makes this a great recipe for children to try.'

Oh indulgence! These are very refreshing when chilled, quick aswell. They're just as great without all the topping, and notably easier to drink :)
