Ingredients

  • 500g sweet potatoes, peeled and cut into bite-size pieces
  • 1 tbsp olive oil
  • 4 skinless chicken thigh fillets, each cut into large chunks
  • 1 large red onion, cut into wedges
  • 2 tbsp rogan josh curry paste
  • 2 large tomatoes, roughly chopped
  • 125g spinach

Method

  1. Cook the sweet potatoes in boiling, salted water for 5-7 mins until just tender. Drain well, then set aside. Meanwhile, heat the oil in a large frying pan, then add the chicken and onion. Cook for 5-6 mins until the chicken is browned and cooked through. Stir in the curry paste, cook for 1 min, add the tomatoes, then cook for another min.
  2. Pour in 100ml boiling water and mix well. Simmer for 5 mins, add the spinach, then cook for 2 mins until wilted. Fold in the potatoes and heat through. Serve with rice and naan breads.

Quite a nice curry but I found there wasn't enough sauce - perhaps I didn't use enough liquid

Loved it! Used half a tin of tomatoes instead and Pataks Balti paste - really delicious, the sweet potatoes really soaked up all the flavour

Second time I have made this. First time followed the recipe completely and it was lovely, tasted really fresh. Tonight I only had frozen spinach, a brown onion and canned tomatoes, but even though it was quite a different meal it was still great!

So tasty! As I am a student, and cooking for one person, I just divided the ingredients up for one person, and ate it without the rice. It was just as tasty, and i was full when I finished, I felt it didn't need rice.

Great dinner, a hit with everyone. I couldn't find rogan josh paste so used jalfrezi and doubled the recipe to feed 6. I also used the whole jar of paste (we love our curry sauce) adding an additional 100ml water with each 2 tblsp extra paste and an extra 2 tomatoes. Thanks for another family favourite!!!

Lovely meal. My other half doesnt like spinach so I replaced the spinach with green beans and it went down a treat. The beans added some crunch to the meal which it would have gone without otherwise.

I put the sweet potato in first for a few minutes to roast a bit in the pan, then followed the recipe. Really good

Really great - I browned off the chicken and red onion then put everything in a large one pot and cooked in the oven for 1hr. (I didnt pre cook anything else)
It worked really well!

this was really yummy but i found the portions were quite big! i think that about 350g of sweet potato would be enough and i would recommend 3 chicken breasts instead of 4 if any one else doesnt like thighs. also i might add more tomato and spinach to balance out the sweet potato and chicken. apart from this, it was a really great dish and i will be making it again sometime soon!

A winner in our house. We use tinned tomatoes instead of fresh, and much prefer bush bok sweet potatoes which have a white flesh, and a nicer texture and taste I think.
