Ingredients
- 125g/5oz sugar
- 6 tbsp sunflower oil
- 1tbsp vanilla extract
- 1/2 ripe banana
- 150g/6oz gluten free self raising flour
- 4tbsp water
- 1tsp oil
- 2tbsp jam
- 1tsp icing sugar
Method
- STEP 1Lightly oil or greaseproof 18cm/7" round cake tin
- STEP 2preheat oven190/gas5
- STEP 3in a bowl beat sugar,oil+vanilla
- STEP 4peel+mash banana into sugar mix
- STEP 5Add flour+water+mix well, turn mixture into prepared cake tin+smooth the top
- STEP 6bake in a preheated oven for 35mins+then cool on a wire rack
- STEP 7Slice sponge in half spread bottom half with jam.place other half on top, dust with icing sugar
