Scallops with anchovies

Ingredients
- 8 king scallops
- 2tbsp olive oil
- 2 garlic cloves sliced
- 3 ancovies drained and chopped
- 1tbsp capers
- 1 1/2 tbsp flat leaf parsley chopped
- 2 tbsp lemopn juice
Method
- STEP 1heat oil and lightly sautee garlic 30 sec-add acovies and cook for a further 45 sec
- STEP 2add capers and lemon juice and take off the heat
- STEP 3in a really hot frying pan add dried scallops and cook 1 min each side
- STEP 4drizzle with capers and achovies
