Swede, potato, leak bake

Delicious served with grilled pork, lamb chops or gammon steaks.

Ingredients

  • 1 Swede, trimmed, peeled and thinly sliced.
  • 500g potatoes, peeled and thinly sliced.
  • 300g carrots! Thinly sliced.
  • 350g leaks thinly sliced.
  • 400ml vegetable stock from a stock cube.
  • 25g sunflower spread,
  • Black pepper.

Method

    1. Pre heat oven to 350 degrees, 350 F, Gas mark 4.
    2. Arrange slices of potato, leeks, swedes and carrots alternative in large oven proof dish. Season with black pepper and cover loosely with foil and bake for 1 hour then remove foil.
    3. Raise the oven temp to 200 degrees, 400F/Gas mark 6. Continue cooking for 25 minutes until vegetable are tender and the top in beginning to turn a pale golden colour.

I used this recipe as the base to use up a number of root vegetables. As I had a parsnip, and we are only two, I used that instead of the swede. The end result was very good but you need to note that the stock should be added before cooking! Not a mention in the instructions! I didn't bother with the sunflower spread. I hope the person who posted this made a typo re the leeks and not that they are unable to spell. Unfortunately, as the spelling is incorrect twice, I fear it is the latter.
