  • 3 tbsp groundnut or sunflower oil

  • 2 fat garlic clove, sliced thinly
  • 1 small red pepper, cored, deseeded and thinly sliced
  • 200g pack raw peeled tiger prawn, defrosted and patted dry
  • 2 tbsp soy sauce or Thai fish sauce

  • 100g bag baby spinach leaves

Method

  1. Heat a wok until you can feel a good heat rising. Add 2 tbsp oil and, a few secs later, the garlic slices. Stir-fry until they start to turn golden, then using a slotted spoon, spoon onto kitchen paper to drain.

  2. Toss in the pepper and stir-fry for 1 min or so until softened, then scoop out and set aside. Add the remaining tbsp oil. Heat, then toss in the prawns and stir-fry for another 2-3 mins until cooked and beginning to brown. Add the soy or fish sauce.

  3. Throw in the spinach and stir-fry until it begins to wilt. Return the peppers and crisp garlic to the wok, then serve immediately.

Really quick and easy. As others have suggested I added some fresh red chilli and added 2 tablespoons of soy sauce as well as a tablespoon of fish sauce. Also used a mix of red and yellow peppers and served it with noodles. Delicious!

This is a mid-week staple in our house - super quick to cook and yummy every time. You can always add in different green veg with this, sometimes I use broccoli or mange tout and I find the Tilda coconut rice perfect with this dish.

I have no idea what went wrong. I love prawns, I love spinach, I adore garlic, soy sauce is fab and peppers are delicious but I didn't enjoy the flavour combination of this dish at all. I usually enjoy dishes that are very savoury. I'm afraid I have to disagree with the general consensus and say it was mediocre. Whilst the dish is easy and speedy to make, I wouldn't bother with it again unless something else was added to liven it up.

This is easy and delicious. I added a couple of tbsp of oyster sauce as well, but otherwise followed the recipe as it is. Very fast to make for a weekly dinner

made this for tea tonight but instead of adding spinach i added noodles which went down a treat.

Just finished eating this amazing dish.
Read the comments before hand and added chilli & ginger. Also a yellow pepper for colour....added the fish sauce AND the soy sauce and fab !!! Everyone happy.....2 teenage sons (who eat for England) and husband. Will def make again :)

Highly recommended, and if you’re a single guy looking to impress in the kitchen make this once for yourself to get the hang of it, then again for your date; she’ll be impressed.

Delicious! I added some chopped shitake mushrooms and a chilli pepper. I used a mixture of olive and sesame oils for frying. A very colourful attractive dish

This was yummy, I tried it with some cherry tomatoes and added 3 tsp of thai red curry paste, 1tsp crushed ginger and dried chilli flakes. Worked really well. The kitchen still smells of it and it's making me hungry!!

This was a pretty nice recipe. It feels very fresh and healthy - though I did add some ginger and chilli to give it a bit of 'oomph'! Served it with basmati rice, and I will no doubt do it again, due to the fact it's so easy to do. I think I'll choose soy rather than fish sauce next time though, because the fish sauce was rather overpowering.
