  1. Using a wooden spoon, mix together the condensed milk and icing sugar in a large bowl. It will get very stiff. Work the coconut into the mix until it’s well combined – use your hands, if you like.

  2. Split the mix into two and knead a very small amount of food colouring into one half. Dust a board with icing sugar, then shape each half into a smooth rectangle and place one on top of the other. Roll with a rolling pin, re-shaping with your hands every couple of rolls, until you have a rectangle of two-tone coconut ice about 3cm thick.

  3. Transfer to a plate or board and leave uncovered for at least 3 hrs or ideally overnight to set. Cut into squares with a sharp knife and pack into bags or boxes. These will keep for up to a month at least, if stored in an airtight container.

I changed the recipe to 190g of sweetened condensed milk and icing sugar and 140g of dessicated coconut to make less and it worked for me. But I had a problem with the milk because there was too much and it was too liquidy but the coconut absorbed it pretty quickly. Overall tasted fine and looked nice.

Made this today as requested by my hubby, after having some dessicated coconut that needed finishing up. As advised by others, I used a whole can of condensed milk with 340g of dessicated coconut and icing sugar. To save the faff of trying to roll it all out, I greased and lined a 20x20cm tin and used clean hands to squash the white layer into the tin, followed by the pink layer. Left it in the fridge for a few hours until it was completely set. Perfect. Don't think this childhood favourite will last long in our house! :-) Am interested to find a diary free version of coconut ice, might trawl the net and see what I can find!

Fab recipe - made this with our local Girl Guides, and got them to roll the mixture into balls instead of rolling out (so they could each take some home that evening).

Well, this looks the part but as I have to have a dairy free diet, I haven't been able to nibble it as I went.... At least it means there is the full amount to distribute to friends in pretty bags for little prezzies!

I have been making this for the last year. I split the mix into 2 and make white individual squares and colour the 2nd batch pink or light green (sounds awful but looks good) so you have 2 different individual coloured squares. Looks just as good bagged up as a present.

Added roughly 50% extra of everything so that i used up the whole tin of milk and it was fab.
400g condensed milk, 400g icing sugar and 300g coconut.
Easy to make with a very helpful 3 year old.
I stuck it in the fridge overnight before cutting.

Also I split the ingredients at the start and added the colouring to the con milk so that it gave a more even pink colour.

What a great tip - never know what to do with my leftover condensed milk, and the coconut ice was so popular it is worth making more.

I am making this recipe out of 101 delicious gifts, which still shows 50g of condensed milk instead of the new version 250g, so when the book gets reprinted you need to edit this recipe or add a note some how! But the 250g version works a treat. cheers buzzybee.

Today for the fisrt time in my life I made Coconut Ice using your recipe. I must say I had no problems with it whatsoever and the finished sample worked well and tastes delicious. Thank you I will use it again.

Recipe was really easy to follow, sticking the two colours together was a bit fiddly though as they kind of blended into each other too much! But once cut you can tell them apart. Taste very yummy too!

I used 200g of coconut, 200g of sweetened condensed milk and 250g of icing sugar and it was perfect, it was moist enough to stick together and tastes amazing :-) will make this again for sure.

We've just made this with the new measurement of 250g condensed milk and so far it looks and tastes brilliant. Can't wait for it to set so we can have a proper nibble!

Hi I made this recipe and my family loved it. But the second time round I made it a little different. I used 340g icing sugar, 340g dessicated coconut 400g condensed milk. I made one batch plain white and a second batch by weighing out the cond. milk and mixing in the colouring first. When finished I pressed out the two mixes to about the same size making sure the top of each mix did not come into contact with any icing sugar, flipped one on top of the other and rolled out to size ready for cutting. This may look really long winded but the finished result means lots more "diet freindly"? coconut squares.

Hi I made this recipe this morning with my son using the same ingredients advised.It turned out perfect was really easy to put together & it taste great.It was our first time making coconut ice,we are now planning to make these delights for the school fete coming up on the 9th July.

This is kind of an ''okay'' recipe. But I also had the problem of sticking the two parts together. But I made it into two colors and served separately... After that it was good... :)

after reading the other comments i was concerned about the amount of liquid to use. i just went by eye and it turned out well.
