  • 175g self-raising flour
  • 100g light muscovado sugar
  • 1 tsp mixed spice
  • 175g softened butter
  • 3 eggs
  • 2 tbsp milk
  • about 140g mincemeat
  • icing sugar, for dusting

Method

  1. Heat oven to 190C/fan 170C/gas 5. Line 12 bun tins with paper cases. Put the flour, sugar, spice, butter, eggs and milk into a mixing bowl and beat with an electric hand whisk or wooden spoon for 2-3 mins, until the mix is light and fluffy.
  2. Put a spoonful of cake mix in each case, then a rounded tsp of mincemeat. Cover the mincemeat with a spoonful of cake mix and smooth.
  3. Bake for 15-18 mins until golden brown and firm. Dust with icing sugar and serve warm or cold.

Super easy and super tasty! A nice change from an ordinary mince pie too. I got loads of compliments and several people have asked for the recipe. Going to make some more this week to use up the last of the mincemeat.

These were delicious! Make a really nice change from traditional mince pies. I made a batch to take to work and people came back for 2nd and even 3rd helpings.

I just made this by thirding the mixture and made about 9 miniature cupcakes in my mini cupcake maker! Parents said they were delish!

Love this fab cake recipe !!!! So easy to make great way to get kids to bake they can dollop the mincemeat as you layer the mixture. I'm not a great fan of mince pies these are a great alternative. Thanks Mary for another great recipe !

really easy, made in muffin cases, good alternative to pastry mince pies. Will definately make again

Baked in mini muffin silicon tray. made about 30. Baked for 18-19mins at 180 degrees. Used piping bag for ease. Came out well enough - not quite as nice as a mince pie, but I will make again as they are much less faffing!

These were rally delicious. Made some slightly larger ones in muffin cases and baked them longer. Really tasty.

I did this as a slab cake in a 9"x9" tin - bake for 30-35 mins and cut into squares. I put half in the freezer for another day.
Very good served warm with rum and raisin ice cream-careful you don't burn your mouth on the hot mincemeat though!
Lovely light- textured sponge cake-I just added vanilla not mixed spice, and not too sweet like mince pies.

i made these with the Sandham Family Mince recipe too. so much easier than messing about with pastry for mince pies. this recipe made 18 regular sized cupcakes. i think next time i'll try them with lots of cinnamon and use the muffin tin

I made these on Christmas eve. They were so simple to make (for a baking novice) and they tasted amazing, particularly when hot. I can't wait to make them again!

first time of doing a sponge cake very easy to do used brown sugar had no muscovado sugarturned out very good might put some icing on the next batch i do

I have just made these for the second time, instead of putting mincemeat in the middle of each cake i stirred it into the mixture before dividing into cases...much easier this way when a three year old is helping!
