Ingredients

  • 1 tbsp olive oil
  • 4 thick pork sausages, cut into bite-sized pieces
  • 2 garlic cloves, crushed
  • 200ml medium white wine
  • 1 tbsp tomato purée
  • 400g can chopped tomatoes
  • 500g pack rigatoni or penne
  • handful basil leaves, torn, (optional)
  • parmesan, to serve

Method

  1. Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.
  2. Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.
  3. While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.

I use red wine with this as I find it's a lot less acidic than using white wine. All the family enjoy this and it's very easy and quick to do.

Pretty easy and cheap, I reckon I could even make this at a festival with some simplicity tweaks. However, really could be so much better!

Definite favourite! I like to add onion, chilli and mushrooms to bulk it up. I find a full pack of 6 sausages is better and that does enough for two with some left over for lunch the next day. My OH thinks it tastes even better the next day!

Added a few slices of pepperoni and just a sprinkle of cayenne pepper and paprika.. made with prawns the next week instead and was just as good!

Delicious simple supper. Used 4 sausages for two adults and one toddler - and next time will use 5-6 I think. Added one onion and served with lots of veg. Will definitely make again.

I really don't cook but have decided I need to learn. I cooked these last week for my husband and we both loved it! I used 350g of pasta for both of us and the amount of sauce in the recipe was good for 2 people - it would never stretch to 4. And we had 2 sausages each. It was quick, easy and tasted great - like a 'posh' pasta, not just a weeknight quick dinner. Very proud of myself but thanks to other comments where I picked up tips on qty's and alternatives etc.

Made this dish for supper. Really tasty. I used sainsburys taste the difference Cumberland sausage and added a few chilli flakes. So easy to make! Next time I will fry the sausage whole and cut up when cooked. This is because the chopped sausage pieces fell apart as they were cooking - still delicious though! The fresh basil works really well.

Another winning meal !! I have a fussy family but they all enjoyed this pasta dish and asked for seconds!!- which is a first ! I Stuck to all the suggested ingredients and measurements - however I did use chorizo style sausages from taste the difference range - Sainsbury's- as a few people said that they felt the need to add chilli or cayenne pepper - i felt this would give it the "kick" everyone else said the recipe was lacking and it definitely worked well ;)

Really tasty, I added some peppers too which was nice. The sauce was very runny, so I will simmer it for longer next time.

I only added a few mushrooms and half a teaspoon of sugar to the recipe. I would have liked to add some chilli too but the kids wouldn't have eaten it! Next time I would double up on the sausages and add some onions.

I made the amount of sauce in the recipe but far less pasta as recommended by other people here - 250g. Only had three sausages so added a mini pack of lardons, an onion and 2tsp hot chilli powder and 1tsp smoked paprika. Was really nice with an excellent spicy kick.

So good and so so tasty. Made this twice in 2 weeks as was such a big hit. Very easy and quick to make. Used Tesco finest caramelised red onion sausages. Yum yum yum!
