Method

  1. Heat 1 tbsp oil in a frying pan. Season and dust the chicken with flour, brown on all sides. Remove. Fry the pancetta and mushrooms until softened, then remove.

  2. Add the final tbsp oil and cook shallots for 5 mins. Add the stock and vinegar, bubble for 1-2 mins. Return the chicken, pancetta and mushrooms and cook for 15 mins. Add the peas and parsley and cook for 2 mins more, then serve.

Absolutely superb, only thing I did different was add a couple of cloves of garlic with the onions, which were small shallots halved. Best chicken recipe we have tried for ages.

This is really delicious. I used 2 x red onions instead of shallots, and chopped up smoked bacon instead of pancetta. Tasty and easy to make.

This was amazing! :) it was very delicious and tasteful :) Did everything as the recipe except pancetta as I did not have. Will include them though next time.

This is a new mid-week favourite. Husband enjoyed it and will definitely do it again.

love this recipe, i swapped the peas for sweetcorn and added fresh garlic and served with mashed potato :) lovely mid week tea :)

Delicious and very easy. I added a splash of white wine and a tablespoon of creme fraiche, as I had them the cupboard, didn't have any parsley so used dried rosemary. Served with pasta but I think it would work well with rice or potatoes. Will definitely make it again.

Very easy to make. Tip - add garlic when frying the mushrooms for extra flavour and add a couple of tbsp of plain flour to the sauce whilst cooking to thicken it up. Tasty. I used chicken on the bone this time (so had to cook for longer) but next time will use chicken breasts

I used smoked bacon instead of pancetta, and didn't have any parsley so I cooked rosemary with the onions. I also added a teaspoon of dijon mustard into the sauce and cooked garlic with the mushrooms and bacon.
A very nice dish and it is 1 pot too, which always adds points in my book :)

I left out the pancetta in this to make even more healthy, used 650g of chicken rather than 500g and made the stock up to 300ml. Also added half a tsp of ground ginger and it fed 5 (with accompaniments). No need to add cream or flour to make a thicker sauce if you're a little generous with the flour dusting.

Absolutely delicious.

Great recipe, sauce turned out perfectly, just added a little cornflour at the end to thicken it up. Very tasty though!
