Ingredients

  • 225g butter
  • 200g caster sugar
  • 1 egg beaten
  • grated rind and juice of 1 lemon
  • 225g plain flour
  • 1 tsp bicarb soda
  • 100g macadamia nuts, chopped
  • icing sugar for dusting

Method

    1. preheat oven to 190c
    2. Beat together butter and sugar for 5 mins until light and fluffy
    3. beat in egg, then stir in lemon juice and rind
    4. sift in flour and bicarb, carefully stir together then stir in macadamia nuts
    5. drop teaspoons of mixture onto greased baking sheet and bake for 15mins, till golden
    6. dust with icing sugar when cool and serve
