Ingredients
- 225g butter
- 200g caster sugar
- 1 egg beaten
- grated rind and juice of 1 lemon
- 225g plain flour
- 1 tsp bicarb soda
- 100g macadamia nuts, chopped
icing sugar for dusting

Method
- STEP 1preheat oven to 190c
- STEP 2Beat together butter and sugar for 5 mins until light and fluffy
- STEP 3beat in egg, then stir in lemon juice and rind
- STEP 4sift in flour and bicarb, carefully stir together then stir in macadamia nuts
- STEP 5drop teaspoons of mixture onto greased baking sheet and bake for 15mins, till golden
- STEP 6dust with icing sugar when cool and serve
