Method

  1. Heat the olive oil in a large frying pan and sizzle the pancetta or bacon for about 5 mins until starting to crisp. Turn up the heat and add the grated courgette to the pan. Cook for 5 mins or until soft and starting to brown then add the garlic and cook for a minute longer. Season and set aside.

  2. Cook the tagliatelle according to the pack instructions and scoop out a cupful of cooking water. Drain the tagliatelle and tip into the frying pan with the bacon and courgette. Over a low heat toss everything together with the crème fraiche and half the Parmesan adding a splash of pasta water too if you need to loosen the sauce. Season to taste and serve twirled into bowls with the remaining Parmesan scattered over.

Delicious! Did add an onion, Worcester sauce, loads of pepper - may put herbs in next time. But that said, it was delicious as per recipe, really lovely!

I made this last night and it was delicious! I squeezed the moisture from the grated courgette so that it fried easier and then added the juice back in at the end - perfect.

Very nice dish, even my fussy kids liked it. I used salmon instead of bacon and added a little chilli to give it a kick. Will definitely make again

We loved this recipe - very quick to make and very tasty! I was quite generous with the garlic and used about 3 large cloves. What did the recipe justice was adding some nutmeg which I mixed as the tagliatelle and the mixture were getting combined. Superb!

Great recipe, I added shallots and blended them with courgettes, garlic and cream as I prefer a smooth sauce to contrast the pancetta, very tasty!

Absolutely wonderful. As suggested in the comments I added onions to my first batch but actually having tried without I don't think they add much to the dish. Really quick, really simple. I added pecorino to mine because I prefer it over Parmesan.

So easy and so delicious... I add some chopped chilli with the garlic and cook some mushrooms on the side and then add them towards the end, almost becomes a carbonara but so delish.

Followed the recipe apart from substituting Philadelphia for the creme fraiche which worked really well. Quick and easy to make and loved by the whole family (even the fussy eaters). Will definitely use this recipe again.

Yummy recipe - I used Philadelphia for the sauce as the shop had run out of creme fraiche which worked very well. Will definitely make again

Absolutely LOVE this recipe. It's very moreish and so tastey and dead simple to make! The recipe is very flexible as well - I added mushrooms & leeks for a bit more veg! Would highly recommend :)
