  • 4 ciabatta rolls, halved and lightly toasted
  • 4 tbsp houmous

Method

  1. Add 1 tbsp of the oil to a pan and tip in the onions. Cook over a high heat for a few mins, then turn down the heat and cook until soft and golden – about 8 mins.

  2. Meanwhile, heat another tbsp of oil and fry the aubergine for a few mins on each side until tender. Set aside. In the remaining oil, fry the halloumi until golden.

  3. Tip the brown sugar, pepper and harissa into the onions. Cook for 1 min until the sugar has melted. While the relish is cooking, spread the rolls with houmous, laying halloumi and aubergine slices on top. Spoon the sticky, spicy relish over and serve.

A weekly staple in our house. Love it. Use a flat bread instead of the roll and have half an aubergine each.

Love the taste of these. I wasn't really sure about the portion size so I aimed at making 2 portions thinking I would take leftover to lunch. however I kept quantities for the harissa relish the same and I used shallot onions. Furthermore I used an entire aubergine, half the amount of halloumi and 2 Italian buns which are probably bigger than ciabbata rolls. This made 2 burgers whereby I Finished all the relish! One and a half burger was enough for me for dinner. I was left with some grilled aubergine which together with other grilled veg, the halloumi that was left in the pack, pine nuts, cherry tomatoes and little gem lettuce I turned into a salad. The salad together with e leftover half burger made for a great lunch the next day. I think next time I'll make some kind of side salad to serve the burger with and then 1 will be enough per person. Also this will up the amount of veg because that is a bit slim in the recipe now. Taste is great! Quantity for harissa relish isn't enough for 4 people . Half an aubergine will also not be enough for 4 people.

The nicest vegetarian burgers we have ever had, even my meat-eating son enjoyed these. Had no harissa so added chipotle smoked chilli flakes instead, oven-roasted my own pepper and made fresh hummus. I am making them again today but this time I will grill the halloumi as it went a bit soggy when I did it in the onion/aubergine pan

Made this for a friend last night and we both loved it. My Son had a beef burger but had the relish and Halloumi with it, and loved it. Will be making this again, as so quick and easy to do.

I love this burger. For the last couple of times I made it I used the aubergine as in the Aubergine Katsu curry (goodfood recipe) so that the aubergine has a crispy coating of breadcrumbs. It's even better than the original!

This is delicious and is so easy to make - will definitely become a regular in this house. I am very bored of the meat substitute type products (Quorn etc) and much prefer to use 'real' food. :-) 5 Stars!

Great recipe - went down well with veggies and non-veggies alike! I roasted my own romano peppers, used sourdough rolls instead of ciabatta and made spiced sweet potato fries to go with it. Mmmm. (There's a good recipe for those on Food Network.) Will definitely make again but next time I'll add some rocket leaves to the burger for a bit of greenery.

I love this recipe and cook it quite often. Doubled the quantities, as per other comments, the above recipe is a nice generous portion for two people. I live on my own and because halloumi goes off quite quickly, I will eat this two days in a row... which is quite a treat! I roast my own red pepper for the relish and make enough for two portions, and it’s just as delicious on the second day.

I had no ciabatta rolls so popped all the ingredients into a pitta instead ... So tasty and easier to eat too, highly recommend!

I made this tonight! I can honestly say this is the best vegetarian burger I have ever had! I didnt have houmous but didnt need it. I will be adding this to my recipe scrapbook! Will make over and over again! I used minimum amount of oil to fry and did not feel at all greasy. Would serve on own or with a refreshing salad!

Great weeknight meal - quick to cook with plenty of flavours!

It can be a bit tricky to cut the halloumi right though (depends on which brand it is), so we normally use twice as much halloumi as described. Sharing one packet between two people... Because we're greedy like that ;)

Love the harissa flavour too, definitely worth buying if you haven't got it already.

In terms of roasted peppers, we've tried both roasting our own and using store bought. (Lidl sells a cheap massive jar, if cost is an issue.)

Lovely - have made it several times now. I don't have harissa paste, so have been using sriracha sauce. It all goes really well together - houmous, halloumi, aubergine and relish. Unexpectedly delicious as there are so few ingredients!

Made for having a friend over for dinner, they were lovely! Didn't have ciabatta rolls so made do with white seeded and worked just as well. Will definitely make these again!

Just made this and it was delicious! Definitely not enough for 4 people though, I made this using about half of everything and I ate all of it!

Absolutely delicious meal! I used pitta and instead of frying the halloumi I grilled it to try make it a bit healthier!

I would suggest doubling the amounts for 4 people, this only served me and my boyfriend.
