  • 3 tbsp harissa
  • ½ x 500g pot low-fat natural yogurt
  • 4 skinless chicken breasts, slashed
  • 1 small butternut squash, peeled, deseeded and cut into long wedges
  • 2 red onions, cut into wedges

Method

  1. Heat oven to 200C/180C fan/ gas 6. Mix 2 tbsp of the harissa with 3 tbsp of the yogurt. Rub all over the chicken breasts and set aside to marinate while you start the veg.
  2. Toss the squash and the onions with remaining harissa, mixed with 2 tbsp oil (sunflower, vegetable or olive is fine), and some seasoning in a large roasting tin. Roast for 10 mins.
  3. Remove veg from the oven, add the chicken to the tin, then roast for a further 20-25 mins until the chicken and veg are cooked through. Serve with the remaining yogurt on the side, and a big bowl of couscous or rice.

This is still a great recipe. This time I added par- boiled potatoes to the veg mix - a meal in just one tray!

My husband and I love this dish. It was so easy to prepare and the chicken was lovely and moist. We added some peppers and red onion aswell. One of our favourites!

Really gorgeous! the yoghurt kept the chicken nice and moist, i add lots of extra flavours to like ginger and garlic and fresh herbs i had in the fridge and it tasted lovely!

Used a few different veg (Onion, Red Onion, Red Pepper and Mushroom), and used Quinoa instead of cous cous, but proved quite a success, especially considering how quick and easy it is - definitely a recipe to be re-used!

The roasted squash is devine and the yoghurt makes the chicken really tender, an amazing way to cook chicken quickly but keep it soft and succulent. I added some garlic and ginger to the yoghurt came out delish.

Loved it....so easy and tasty! Used a few different bits of veg and low fat creme frieche instead of yoghurt as that's all I had in fridge - worked just as good I think.

Very easy and very tasty!
I've found that harissa paste varies a lot in its strength, from mild to powerful, so be careful with the amounts!

Love this recipe! So tasty and full of great flavour. I will be making it lots more :) I have marinated the chicken for about 5 hours.

Excellent recipe - easy and tasty. I decreased the amount of squash but added a red sweet pepper and half a courgette to the vegetable mix. As recommended, I roast the veg for 20 mins before adding the chicken. I also added some cherry tomatoes near the end of cooking.

Delicious! I did make some changes though. I added garlic cloves and lemon juice to the yoghurt and harissa. Added more potatoes, dried apricots and red capsicum to the vegies and also poured in vegetable broth to create a sauce. Served it with the Harissa Cous Cous and the family can't wait to eat it again!

I made this for dinner this evening and it was fab! Having read the comments section I baked the veg for 15-20 mins before adding the chicken, and like another user I used whole jar of Al'fez harissa as we love spicy food. I also added chunks of red pepper to the veg mix, it made it nice and colourful, and more importantly tasted great. I served mine with spiced mint and coriander cous cous, and yoghurt to dollop. A real winner of a recipe, and almost embarrassingly easy to make!

Really nice recipe, easy too. I marinated the chicken for longer (thanks to the tips above) and also didnt use squash as my OH hates it. I used a variety of veg I could roast instead (courgette, peppers, onion etc). Also served with cousous.

This is a firm favourite in our house. So tasty, especially given how ridiculously easy it is. Marinating the chicken for longer makes it more tender.

Mmmmmm!!! Very tasty and so simple to make. Have never used harissa before but loved the flavour with the chilli kick. Will defo make this again :o)
