  • 2 tbsp breadcrumb, with mixed herbs

Method

  1. Heat oven to 200C/180C fan/gas 6. Carve all leftover lamb off the bone, roughly chop and place in an ovenproof dish, or 2 individual pie dishes. Pour over some gravy, or if there’s none left, just a bit of stock to moisten. Crumble the leftover potatoes over, then scatter with cheese and any leftover herb crumbs. Bake in the oven for 30 mins until golden on top and bubbling around the edge. If you’ve got any greens leftover, then quickly stir-fry to reheat and serve alongside.

I love this website - you just check what's in the fridge and it finds something for me to make with it. This 'pie' was a big success - will certainly do it again if we have any roast lamb left over.

We love this pie. It's now a staple in our house on Monday. As well as lamb we also use leftover roast chicken to make the pie which is also delicious. Using leftover roast potatoes makes a much tastier topping than just plain boiled potatoes. If you don't have enough gravy left we find adding some creme fraiche and some fresh herbs makes a really nice gravy rather than jusy using stock which is a bit watery.

I give this a rating of 4 out of 5 because this leftover lamb and potato pie is just one of the best meat recipes I have seen. Completely gorgeous and fabulous too. This was delicious. Had loads leftover from the 'leg of lamb cooked on potatoes' recipe, including some red wine and onion gravy. This was almost as yummy as the original roast dinner, and as bec said, the lamb came out really tender. A great way to use up the leftovers from a rather too big leg of lamb.
Mmm...delicious! Will definitely be making again.

Husband & I had this tonight, what a yummy way to use up Easter leftovers! If I'd had extra veg left I would've just added them with the meat at the bottom of the dish. The meat came out really tender which was a bit of a surprise as it was fairly solid when it went in!! Really delicious definitely adding to my binder for future reference.

Was trying to give you a thumbs up on your veg idea but it wouldn't let me...so here it is...thumbs up :) I have spinach and I'm a bit nervy about stir frying cooked spinach so will add that at the bottom of the dish, then the meat, then crumble on leftover stuffing, gravy, spuds and cheese .

My husband made this for tea tonight and it was delicious. We used up the leftover beef from yesterday's roast, topped with leftover roasted parsnips, butternut squash and potatoes, some cheese and some dried herbs, and served with the other leftover veg, stir fried as suggested.

Made last night and it turned out great. I used leftover mashed potatoes and for the veggie I added corn and golden hominy grits. Didn't have any leftover gravy or juice so I used beef broth.
