  1. Heat the oil in a medium saucepan until hot, tip in the onion and let it sizzle and turn golden (4-5 minutes) as you stir occasionally. Add the mince and cook until it’s no longer pink, stirring to break it up and scraping the bottom of the pan so it doesn't stick. If it does, add a splash of oil.

  2. Tip the tomatoes into the mince, then fill the can with water and pour this in. Add the tomato purée, give it all a good stir and let it come to the boil. Simmer, covered, for 25 minutes to cook the mince through.

  3. Stir in the rice from both packets and let it heat through gently, then stir in the parsley. Serve with tortilla chips.

Feel the original recipe would have been a little bland so I added chilli powder a pepper sweet corn and kidney beans and used brown rice. I was feeding two adults so halved the rice and pork
Very easy and enjoyable with the tweaks and think will become a regular

I softened 1 red & 1 brown onion, added 2 chopped carrots, 1kg turkey mince, 2 tsps sundried tomato paste, 2 sachets mild fajita seasoning, 2 cans chopped tomatoes, 1 can sweetcorn, 2 sachets Mexican rice. Fabulous. Family winner.

this was so easy to make, all the family loved it, would def make again, pork mince is a nice change, i have only cooked pork mince a few times now, goes really well with mexican recipes

My family love this recipe - it's a great child-friendly alternative to chilli. I always add a tin of red kidney beans in chilli sauce and also use Uncle Ben's mexican style rice. Quick, easy and healthy meal which the kids enjoy - perfect!

I've made it for my family of 4 tonight Gemma and it did very nicely.
Used Uncle Bens Mexican rice with some kidney beans added and it was lovely.
