  • 1 tsp vegetable oil
  • 2 rasher lean dry-cure back bacon, trimmed and chopped
  • 2 large bone-in chicken thigh, skin removed
  • 1 medium onion, thinly sliced

  • 2 tsp plain flour
  • 2 tsp tomato purée
  • 150ml dry white wine
  • 200ml chicken stock
  • 50g green lentil

Method

  1. Heat the oil in a non-stick wide, shallow pan, add bacon and fry briskly until lightly coloured, then lift on to a plate. Add the chicken and fry on each side until lightly brown. Set aside with the bacon. Tip onion and garlic into the pan and cook for 5 minutes. Stir in the flour and tomato purée, then stir over a low heat for 2-3 minutes. Add the wine, stock, lentils and thyme. Bring to the boil, reduce the heat, cover and simmer for 5 minutes.

  2. Stir in the mushrooms. Add the bacon and chicken, pushing them under the liquid. Cover and simmer for 20-25 minutes, or until lentils are tender and the chicken cooked. Season with salt and pepper.

Made this today for the first time, didn;t have any bacon and used 4 chicken legs. It was very nice but not sure how to rate it I'll save that until tomorrow when we eat the rest. Served with rice and broccoli.

Used half a 400g tin of green lentils, rather than dried, so I did not need to cook it for longer than the recipe stated. Also used 4 chicken thighs (they weren't particularly big thighs).
Lovely flavours, will make again!
Served with carrots and new potatoes.

If it wasn't for the bacon I don't think I would enjoy this recipe! I think it lacked flavour but was still edible!

Lovely recipe, very satisfying!! Used red split lentils instead of green and sustituted the wine for extra stock with a tsp of sugar. Served simply with broccoli. Yummy!!!!

Just finished licking my plate! Me and my finace loved it, so much flavour and quick and easy. Even though it was just the two of us I used 4 large chicken legs and just double the quantity's worked out lovely and the only changes I made was I added a whole can of green lentils and a little bit of cornflower to thicken. Had it with new pot's and shredded cabbage. Looking forward to having it for tomorrows dinner!

I used more lentils than recommended and served with cauliflower and brocolli - no need for potatoes, delicious.

we loved this the first time i made it, so the next time i added a tsp of cumin seeds with the onion and garlic, and when adding all the stock and wine i add a small amount of crushed dry red chillies, i serve it with roast potates to mop all that lovely sauce.

We've had this a couple of times now. It is a favourite. We have had it exactly as the recipe says which is delish, but also dropped the bacon and added red peppers and some garam masala for an Indian feel and that is gorgeous.

A really versatile dish.
