Method

  1. Fry red onion in olive oil.
  2. Push onion to one side and add meatballs. Cook for 5 mins or until golden.
  3. Stir in tomatoes chicken stock red wine vinegar and sugar.
  4. Cover and cook for 20 mins.
  5. Drain and rinse beans. Add to pan, season well and cook uncovered for a further 10 mins.
  6. Scatter with Parmesan and serve.

    Hi, Just noticed this recipe in January 2012 book and really appreciate that you have added it to the website. Only thing is that recipe says 2 x 400 g. of tomatoes. Any reason why you think we should reduce it to 1 tin please?
