  1. Preheat the oven to fan 180C/conventional 200C/gas 6. Boil the potatoes for 10 minutes until tender. Meanwhile, whisk the mustard, orange juice and honey together in a bowl to make a marinade. Turn the salmon fillets in the marinade until evenly coated, then set aside. Deseed the peppers and cut into thick strips.

  2. Drain the potatoes and tip into a shallow ovenproof dish or roasting tray with the peppers and sugar snap peas. Drizzle over the oil, salt and pepper, then toss everything together. Put the salmon fillets on top of the vegetables and pour over the marinade. Bake for 20-25 minutes until the salmon is cooked and just starting to brown.

I have made this recipe a few times now and it's lovely every time. I add some tender stream broccoli and asparagus along with the sugar snap peas and some extra mustard in the marinade, I love the taste of the sweetness of the orange with the mustard.

A great quick simple recipe.

This has become my favourite way to cook salmon! Really easy, healthy and tasty. I always forget oranges so just use lemon juice instead! Lovely, lovely dish!

So difficult to find great tasting food that is genuinely healthy!
This is so simple and so delicious. I have made it 3 times now always substituting the orange for lemon, always making twice as much sauce and marinating the salmon for as long as possible (the tastiest was an all day job, but adjust the cooking time as the citrus is 'cooking' it while marinading).

Very tasty, cooked the salmon and juice separately as didn't have room in the veg tin. Got lots of praise and even my toddler loved it. Flavour was lovely and not too sweet. Will make again and double the sauce quantity.

Made this tonight, it was pleasant but didn't wow me. Wish I'd read the comments before, I may try it again or use a lemon. Maybe a little less oil too. I didn't use the pepper or sugar snap peas, I used green beans and babycorn and served them steamed. Loved the glaze the salmon got from the honey/juice/mustard combo though.

Used mushrooms & baby tomatoes instead of peas. Agree that lemon may be better than orange & will use next time. Also there was sufficient marinade for 2 but would definitely double the quantity for 4. Enjoyable meal but still feel lemon would enhance flavour more than orange.

We are not big fish fans but are trying to introduce more in to our diets. Cooked this for tea tonight and it was really wonderful. I chopped a whole head of garlic and used green beans. Other than that I followed the recipe. Will definitely make this again. Thanks good food for another brilliant recipe:D

We have just had this for tea. I was really hopeful but it turned out disappointingly sweet. I used wild Alaskan salmon, which is tricky to cook and it did dry out after 25 min. The vegetables were the best part - I did Charlotte potatoes, purple sprouting, one courgette and a few cherry toms. Our 5 year old ate some, so it maybe ok for kids. Next time I will revert to anchovies /garlic/parsley/ lemon combo with this, it may work better. Wild salmon will need less cooking as well but may try trout. Little washing up, my husband gives it three starts ( he is trying to be nice?!)

Lovely recipe. Made it for Sunday dinner and with friends round. Could prepare it all in advance and all I needed was to put it in the oven when ready. Used crushed garlic in normal olive oil and marinaded the salmon for couple of hours in the sauce. Threw in green beans and more peppers as well. Everyone loved it!

Just had it for lunch. Simple, colorful and very tasty. Used chilli infused olive oil instead of garlic but added few unpeeled garlic cloves. Fantastic recipe when you are short of time.

This was so easy to make, what a gem! I even managed to wash up all but the roasting dish whilst it was all in the oven so the kitchen was clean & tidy before we even ate.

I made it for 2, but used the full measurement of marinade as it was easier than only using half of an orange. It turned out to be a great amount.

Having no garlic olive oil, I crushed a garlic clove into the marinade. I might used 2 next time as I think it could do to be more garlicky next time.

Used fine green beans instead of sugar snaps as we already had some in the cupboard, might experiment with other veggies in future.

This recipe will definitely be used again in my house. It was a no fuss recipe that everyone enjoyed. I even threw in a few other vegetables that I knew people liked to accomodate everyone. I did take the advice of one of the other ratings and made double the juice as I was cooking for 5 people.

This was just epic, probably the best recipe I've tried from bbc goodfood. I like westy's comment above and will be sure to try this next time as I thnik it would work really well. I might add some courgettes too. The peppers and peas were a little Al Dente so I will oven bake these with the spuds a little before adding the Salmon but I suppose this depends on how you like them.

Yes frozen salmon is fine to use. A frozen fillet should cook in the same time as the recipe states, if you are not too worried about the salmon fillets browning as they are in the oven for quite a long time.
