  1. Heat the grill. In a bowl, mix together the pork, garlic, lemongrass, fish sauce and half the coriander. Season with pepper. Mix well and form into 8 patties. Rub each one with the oil and a sprinkling of sugar, then place on a rack in a baking tray.

  2. Grill the patties for 3 mins each side until golden brown. Meanwhile, in a large bowl, cook the rice noodles following pack instructions. Drain the warm noodles and serve with the patties, chopped spring onions, remaining coriander and a drizzle of sweet chilli dipping sauce.

I steamed these, and because I forgot both the sesame oil and the sugar, rolled them in toasted sesame seeds afterwards. You need to steam until no pink meat remains; how long this takes depends how big you've made your meatballs. I have frozen some for dropped into Thai chicken broth. Also good for steaming inside lettuce leaves for a light supper.

Delicious! Lovely textures and fresh flavours. I pan fried my patties due to lack of a grill and they got a lovely crispy coating in the process.

Leaving out the rice noodles and serving with the coriander & spring onion salad with sweet chilli sauce is totally delicious - Extremely easy & scrumptious

You won't need to salt the meat mix as the Thai fish sauce is salty enough. It's not always easy to buy lemongrass. After searching the herbs and spices section of Sainsbury's with no luck, I bought a jar of their lemongrass in white wine vinegar. How much to add? I fried one sample meatball to test for flavour and decided I needed more. Generous tbsp, drained and rinsed. I still think it would have been better with fresh lemongrass.
