Method

  1. Heat oven to 190C/fan 170C/gas 5. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs. Alternatively, you can do this in the food processor. Add enough egg to bring the mixture together to form a stiff dough.

  2. Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices and place on a large baking sheet. Space them out as the mixture will spread when baking.

  3. Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the centre. Bake for 10-15 mins until slightly risen and just golden. Cool on a wire rack.

I've never bothered rolling the dough into a tube as my children prefer to make shapes from it, or just rough round-ish biscuit shapes. Extremely forgiving dough, it doesn't matter how much man-handling it goes through with the children, when it's baked we always get delicious light and crumbly biscuits. We use lots of jam per biscuit as they do spread a lot and can look a little odd otherwise - huge biscuits and tiny blob of jam. Have always used mixed fruit jam as not all the family like strawberry, but would be great with any jam. Simple enough for my 4 and 7yr olds to do with only my help putting them in and out of the oven. Brilliant!!

Lovely recipe, I added a tsp of vanilla to the dough and added plenty of jam- they are delicious and perfect for kids (and the young at heart). Softer than cookies, more cakelike inside and utterly fab. Yay, another favourite.

Taste nice, easy to make, my little one enjoyed helping. I also added a bit of desiccated coconut and it really works well. Would definitely recommend.

Very delicious and so easy, even for a rubbish baker like me! after preparing the dough, if I don't use it all I wrap it in foil or clingfilm, store it in the fridge and can chop rounds off it when I fancy fresh biscuits.

Just made my first batch. I used the ingredients stated + 50g coconut (Possibly could have used 100g, add when you are making the 'breadcrumbs'). I also rolled out on the bench to about 2cm thick but they do spread out once cooking, so I would suggest 1cm thick (I didn't roll as a tube then cut).

I'm going to try with 1 or 2tsp cinnamon next time instead of coconut. These are a lovely tasting and easy to cook biscuits.

I used my home made Blackberry and Raspberry jam, DEE-LICIOUS!

Quick, easy and tasty. I don't bother making the tube I make balls, flatten them a bit with my hand and stick my thumb in to make the space for the jam.

Lovely biscuits. Due to my son's allergy to eggs, I used 60ml of buttermilk & 1/2 tsp of vanilla extract to replace the egg. The result: a cross between a biscuit & a scone. My family loved them. Will definitely make again.
