Zucchini Tomato-Anchovy Pasta

Ingredients
- 500 g penne
- 1 zucchini
- 1 red onion
- 3 garlic cloves
- 150 ml tomato sauce (homemade, with oregano)
- ü cup anchovies
- ü cup oil from the anchovy box
- ý cup grated parmesan
Method
- STEP 1Slice the zucchini.
- STEP 2Peel and chop the onion.
- STEP 3Peel and chop the garlic.
- STEP 4Chop the anchovies.
- STEP 5Heat anchovy oil in the skillet.
- STEP 6Add the onion and garlic, stir for 5 mins.
- STEP 7Add the anchovies, stir for 2 mins.
- STEP 8Add the tomato sauce, stir for 5 mins.
- STEP 9Set aside.
- STEP 10Cook the penne in large pot of boiling water for 9 mins.
- STEP 11Add the zucchini and cook for 1-2 mins.
- STEP 12Reserve ¾ cup cooking liquid.
- STEP 13Add the cooking liquid to the tomato-anchovy sauce in the skillet and get to boil.
- STEP 14Stir for 1-2 mins.
- STEP 15Mix the pasta and zucchini with the tomato-anchovy sauce.
- STEP 16Season, sprinkle with the grated parmesan and server.
