Cold weather hotpot

This recipe stretches a pack of mince brilliantly - and is perfect eaten straight from the bowl with a spoon

Ready in 40-45 minutes

Method

  1. Cut each onion into eight wedges. Roughly chop the carrots and cut the potatoes into large chunks. Put the kettle on.
  2. Heat a large non-stick pan, add the mince and fry quickly, stirring all the time, until evenly browned. Crumble in the stock cubes and mix well. Add the prepared vegetables, stir them around, then pour in 900ml/11⁄2 pints of hot water from the kettle. Bring to the boil.
  3. Reduce the heat, cover and simmer for 25-30 minutes, until the veg are tender. Stir in the baked beans and a generous splash of Worcestershire sauce and heat through. Taste and add salt and pepper if necessary.
  4. Scatter over the parsley, then ladle the hotpot into bowls. Put the Worcestershire sauce bottle on the table in case anyone fancies a bit more spice.

    I made this one Autumn evening after searching for a yummy hot-pot type dish. I did make a slight addition - I added some bisto power to the gravy to make it thicker as it was quite watery! Very nice and great for a crowd!

    I made this last night, all the family enjoyed except my 11 year daughter who fished out all the onions from her bowl but ate the rest. I started the mince off on the hob (I always add a slash of milk which makes the mince less tough) and then put the veg in and placed the pot in the oven so I didn't have to stand over it for a few hours. I added some cornflour to thicken and the beans at the end when ready to serve. Lovely melted in the mouth, now on my list.

    Made this for mid week, bung in the oven forget about it while doing dance run. I did add more veg, think it was celery and babycorn and I did fry the veg for a few mins before adding water. Then like Alison I put in the oven on low heat. Lovely home add the beans etc quick heat through on hob while getting out the plates, done how easy but good results. Will be doing again.

    I thought this was a great, comforting mid week meal and as there are only 2 of us I had enough to take to work for a few days lunches as well. It helped towards my 5 a day as well.

    Really loved this! Added the beans at the end as my hubby doesn't like them... The children devoured it and it was made extra special with chunks of tiger bread and butter.

    I have made this countless times. Each time I use whatever vegetables are in the rack. My husband and 4 year old son think it's such a treat and love it with warm pitta bread. For some reason, it's become known as "Cowboy Stew" in our house.
