Chicken stuffed with spinach & dates

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Cook the onion and garlic in a non-stick frying pan with a splash of olive oil and some seasoning for 5 minutes, then add the dates, spinach and half the cumin. Cook for another minute or two.
  2. Cut the chicken breasts lengthways so they open like a book. Divide the stuffing between the breasts and put in a shallow baking dish. Rub the remaining cumin over the chicken and season. Drizzle over the pomegranate syrup or honey then bake for 20 minutes. Serve with green beans.

    I have made this recipe with both honey and pomegranite. The honey made the chicken breasts a little tough on the outside. Will try it again but I think it is nicer with pomegranite. Very very tasty. I am making it tonight!!

    My hubby claims that he does not like dried fruit with meat, but he did not seem to pick up on the dates. In fact he really enjoyed this dish and I was very happy to find something lighter that did not disappoint after all of the over-indulgance we committed over X-mas

    This is easy, delicious and quick and looks as though it takes a lot more time and effort to prepare. Even better that it is low fat and good for you! I used Agave syrup instead of honey which worked well and added toasted pine nuts to the filling. A perfect mid-week meal for when you have girl (or boy!) friends round for supper.

    Made with pomegranate syrup, was delicious! so simple and quick and presentable for a dinner party as well. The combination of flavors was perfect. Next time will add more vegetables on the side.

    I feel this receipe really did not deserve the comments received. It did not taste good. I'm giving it 2 stars : and that's 1 for the beans and 1 for the fact the chicken breast was moist. After reading the comments on this I thought it would be a good one for a mid week meal I thought I try it. I used honey as I couldn't get my hands on the pomegranate syrup. It lacked and real burst of flavour. The cumin, honey, spinach, garlic, dates and onion was not the taste sensation I was hoping for.

    Very dissapointed in this. The sweetness of the pommegranate was far too much and made me feel a bit sick whileit was cooking. The spinach (which i love) was bland... needed about 100 times more garlic! Shame :(
