  1. Melt the fat in a non-stick pan, allow it to get nice and hot, then add the bacon. As it begins to brown, add the onion and garlic. Next, add the sliced sprouts or cabbage and let it colour slightly. All this will take 5-6 mins.

  2. Next, add the potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan – allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again. It’s the bits of potato that catch in the pan that define the term ‘bubble and squeak’, so be brave and let the mixture colour. Cut into wedges and serve.

My Grandad used to make this for me every Monday night (Sunday roast leftovers) when I was a kid, I sooo miss this.... However his 1 secret was ... Add an egg, and no garlic.
I have to admit with garlic it will add another dimension to the recipe, but should be an optional extra, down to taste.

Made this with cooked chicken. Added some stuffing and cranberry sauce to it and come leftover carrot and turnip mash. Was the first time I've ever had bubble and squeak and I have to say it was mighty tasty!

Have left out the garlic, and i had peas instead of brussels, plus I put a bit of grated cheese in mine as well, helps stick it together and it tastes lovely :)

mmmm yummy. i made mine into cakes and used cabbage. i used the garlic (sorry above commenters) and it was scrummy :)

This was delicious and filling. Mine didn't hang together that well. I think I probably needed more potato - I didn't measure it. Was still really tasty. I used brocolli and leek instead of cabbage. I used garlic too!

You can put what you like in along with the traditional main ingredients. I love garlic & have included it in my Bubble & squeak on occasions. So Paul I support you 100%.

Ah, I love this! This is our boxing day treat. I agree with Scrummy though; not sure about the garlic!

We always put in left over turkey ripped into pieces in ours, oh and sausage stuffing (thats if i've not already scoffed it all before boxing day!) Don't think I could servive eating a meal without meat, so like the idea of bacon, but again I agree with Scrummy; it has to be your Christmas meal left overs, or its just not the same!

Mmmm... can't wait!

Garlic in bubble and squeak! i dont think so love! you should add everything that is left over from christmas dinner esp the roasties sliced up and the chippolatas. garlic indeed.
