  • 400g can sweetcorn, drained
  • 500g floury potatoes, cubed
  • 2 tbsp milk
  • 1 tbsp sunflower oil
  • 1 bunch spring onions, finely chopped
  • 1 tbsp tomato purée
  • 1 tsp paprika
  • 600ml vegetable stock
  • 200g small peeled prawns, defrosted if frozen
  • 4 rashers streaky bacon

Method

  1. Tip the corn into a food processor and blend to a purée. Boil the potatoes in salted water until tender. Drain, mash with the milk and season to taste. Meanwhile, heat the oil in a large pan, add most of the spring onions and fry for 2 mins until softened. Add the corn, tomato purée, paprika and stock. Bring to the boil, simmer for 5 mins, then stir in the prawns.
  2. Grill the bacon until crisp. Divide the soup between 4 bowls and spoon the mash into the centre of each. Break up the bacon and scatter over the top with the remaining spring onions.

This is scrummy, the sweetcorn and potato make it filling, and the crispy bacon and spring onion add a really nice flavour. Great comfort food recipe.

Easy, quick, delicious and fills you up. My boyfriend loves, loves this chowder. I will be making it again this weekend :)

This was delicious and easy to make, didn't have any paprika but used some fresh chilli and cracked black pepper instead and left out the bacon. Will definitely make this one again!

Not sure what I did wrong - was really looking forward to this but all I could taste was bacon and mash in a lot of gravy. That was nice but a waste of the prawns I thought and the sweetcorn wasnt brilliant either. Not awful (we ate the lot) but probably wont go to all thia trouble again.

Yummy yummy, even the picky boyfriend liked it ! Halved the recipe for two and it was a too small a portion for an evening meal. With bread it would probably be enough. Without a doubt will be doing this again...easy and delicious. Well done again Mary x

wow! this is the first time i've made soup with mash, and it was great! the pureed sweetcorn gives a great base for this lovely soup, and the spring onions really freshen it up and make it interesting! with the mash and bacon pieces added, it was one of the most comforting and delicious soups i've ever had :)
