My mother-in-law gave me this recipe many years ago and really pleased to find it here and try it out again. The simplicity and tasty results are perfect!

Forgot to give the full 5 star rating. It's simplicity and ease of making makes it well deserving of this.

Exactly the same recipe as my mother passed down to me. I find that leaving the soaking ingredients for an hour or so is long enough just to soften the bran and plump up the fruit. I don't find it over sweet at all, perfectly balanced in fact and a great hit with friends. Just slice and serve spread with butter.

What a simple recipe. Would have given it 5 stars but it was very very sweet. (yes I know it's a cake but still!!) Am going to try it again but with less sugar. not sure if it will work but we'll see. Can not see this cake lasting long once my son is home from school!!
