  1. Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often.

  2. Meanwhile, peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.

Fantastic tasting soup. My only negative comment is all the grating. I think it would be just as good if the vegetables were just chopped.

Didn't have a lime so used a lemon, I also put in less liquid than suggested as I felt it would have been too runny. Very tasty and my 2 year old loved it too :-)

I initially made this for my boyfriend and I for no specific occasion. It was only the second soup I made and it turned out fabulous. I found it more time consuming grating the sweet potato so I just chopped it ino small cubes and it was fine when blended later on. I can't wait to make this soup again it's already a family favourite!

I made this soup last night for my mother visiting the UK from Canada. After her catching a cold on the plane this was the PERFECT healthy soup to make. All the ingredients were so tasteful! Will be making this again and thank you for the recipe!!! I would recommend grating as suggested because it is important everything inside the soup cooks throughly before blending. Also, I believe the preparation time suggested for this recipe was wrong. Took more like 20mins to prepare as opposed to 10mins. At the end of the day... if you've got some spare time.... great soup!

lovely recipe. Like the others, i didn't grate - far too time consuming! Just chopped finely and it worked out well, although a bit too much stock/milk for me. We didn't have any coriander so left it out and it was fine without. I added last night's left over carrot, sweetcorn and lentil soup (much thicker) to it to thicken it a bit and add some more flavour - and I added in some spinach from the garden to add some more iron and vitamins - put all in the blender and it worked out just fine. Very delicious in fact!!! Yummy!

Delicious soup loved by all the family. Everyone had a second plate. Grated the veg the first time I made it but after reading the comments only chopped the next time which was much easier! Will definitely be making this again & again!! Didn't have any coriander but the taste was still brilliant.

Delicious soup. Five-year-old daughter asked for second helping (pretty much unheard of behaviour!). Replaced one of the onions with a leek - & only grated the apple (unpeeled) and chopped everything else. Had a couple of tablespoons of sour cream that needed using, so used this instead of milk.

Three large sweet potatos are about right for the quantity and don't stint on the curry powder! Within reason of course. Naturally I did not grate anything, just chopped them up. Result very nice

I left out the milk, but added few extra chilli seeds. It was so tasty, I pretty much ate the whole soup just for dinner.

a really tasty soup - i used hot curry powder which gave it a real kick.
I blended it and it has a really smooth texture.

With regard to Queen Bee's comment about low fat/oil, I usually omit sauté for vegetables and just buzz everything into the stock and boil it. I don't sauté unless it's absolutely crucial for the final result, e.g. French Onion Soup, definitely needs the caramelisation process. Also try smoked paprika/powdered cumin/powdered coriander for a change from the curry powder. Quark instead of milk. Pumpkin (Invincible or Crown Prince) instead of squash (had a glut, still using after harvesting 3 months ago.
