Ingredients

  • 2 tsp medium curry powder
  • 3 tbsp olive oil
  • 2 onions, grated
  • 1 eating apple, peeled, cored and grated
  • 3 garlic cloves, crushed
  • 20g pack coriander, stalks chopped
  • thumb-size piece fresh root ginger, grated
  • 800g sweet potatoes
  • 1.2l vegetable stock
  • 100g red lentils
  • 300ml milk
  • juice 1 lime

Method

  1. Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often.
  2. Meanwhile, peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.

Like others, grated only the ginger. I also used 150ml coconut milk and 150ml skinny milk instead of the 300ml milk only. I think it works superbly. Gorgeous. In fact, I'd go so far as to say that, produced with the coconut milk, this is one of the best soups I've had.

This was quite good. I didn't have curry powder on hand, so I substituted the curry powder for garam masala and amchor. Also, having made this with both cow and coconut milk, I must say, coconut milk gives the soup a wonderful complexity that I find is missing when using cow's milk.

Lovely soup! I normally manage to mess soups up but this was so easy once I'd finished grating! I think next time I'll add a bit of chilli to give it an extra kick

Made this for my lunch for the week, wasn't sure at first but it grew on me as the week went on, now I'd make it again. Replaced some of the sweet potato with 2 carrots and didn't add the milk, I also only blended half because I like my soup a bit chunky. Was yummy as the cold weather was setting in

Just made this, super tasty. As I already had some baked sweet potatoes I used these instead of grated raw ones, and so only used 600ml of stock. I also didn't have any milk so I used 100ml of slightly sweetened soya milk. Delicious!

Delicious! Chopped instead of grating, used ground ginger and ground coriander, and lemon instead of lime (though i thought it was delicious before i added this too!) Will definitely be making again.

Great soup. Thanks to all the commentators advising against grating - saved a LOT of time. I doubled the curry powder & used skim milk. Will definitely be making again.

Fantastic tasting soup. My only negative comment is all the grating. I think it would be just as good if the vegetables were just chopped.

One of the best soups I have had. Even the kids loved it, with a spoonful of natural yoghurt in; not that it is particularly spicy.

Didn't have a lime so used a lemon, I also put in less liquid than suggested as I felt it would have been too runny. Very tasty and my 2 year old loved it too :-)

I initially made this for my boyfriend and I for no specific occasion. It was only the second soup I made and it turned out fabulous. I found it more time consuming grating the sweet potato so I just chopped it ino small cubes and it was fine when blended later on. I can't wait to make this soup again it's already a family favourite!

I made this soup last night for my mother visiting the UK from Canada. After her catching a cold on the plane this was the PERFECT healthy soup to make. All the ingredients were so tasteful! Will be making this again and thank you for the recipe!!! I would recommend grating as suggested because it is important everything inside the soup cooks throughly before blending. Also, I believe the preparation time suggested for this recipe was wrong. Took more like 20mins to prepare as opposed to 10mins. At the end of the day... if you've got some spare time.... great soup!

lovely recipe. Like the others, i didn't grate - far too time consuming! Just chopped finely and it worked out well, although a bit too much stock/milk for me. We didn't have any coriander so left it out and it was fine without. I added last night's left over carrot, sweetcorn and lentil soup (much thicker) to it to thicken it a bit and add some more flavour - and I added in some spinach from the garden to add some more iron and vitamins - put all in the blender and it worked out just fine. Very delicious in fact!!! Yummy!
